Lupe's Fried Bananas

Talented blogging friend Rueben from Guam Firehouse Cook and his amazing wife Lupe have been making me hungry with their wonderful pictures and recipes!
It will take me a year at least to try all of their recipes... but I hope to make as many as possible. :)

I found some plantains at the store... peeled and cut them into pieces..

Made Lupe's Batter

I followed Lupe's instructions and fried them til golden..

Topped with a bit of butter.

These were sooooo tasty!! Thank you Lupe and Rueben for sharing your recipe. I've made fried plantains in the past but your recipe is definately my favorite. I will be making these again soon.

If you get a chance, check out Rueben's BBQ Guam site too! Makes me want to move to Guam and live on the beach! lol

It looks delicious. We love plantains too. I like to wait until they are so ripe that to look at the outside you'd think they were bad and then fry them. They are so sweet.

Cowgirl I am so glad you were able to try out the "Madoya" bananas and equally as glad that you really liked them. They really are a great treat and quick to make. Great job!!! :{)

I love plantains and do them from time to time. Yours look really good. In Guatemala they serve them with sour cream as an appetizer-- good that way too.

There was a good thread on cooking plantains several years ago in the old CompuServe Cooks Online forum. See http://community.compuserve.com/n/pfx/forum.aspx?tsn=1&nav=messages&webtag=ws-cooks&tid=151272. The thread has some links to various takes on the process. If you go down to message 10 there are some pictures I took of my approach.

Hay Cowgirl! I have a funny story to tell you about plantains. I went to Jamaica to do mission work. It was about 20 of us that went. My friend who is alot like me when it comes to eating will eat anything and alot of it if it's good! He found these little bananas in a fruit bowl when we got where we were staying and ate one he said they were very good! They were only about 4 in. long not sure if they are the same as the ones you cooked. Anyway while we were setteling in waiting on supper he ate about 12 of them! Everything was fine untill the next morning when we were ready to go work on this church that had the roof blown off it. Nobody could find him! Well evidently your not supposed to eat that many at one time he stayed on the toilet for 2 days! Now you can run him out of the country with a hand full of plantains! We've been back several times and he tells everbody not to eat the little bananas!!! lol:) So i'm playing it safe and not eating any but they do look good!! Hope you have a blessed day. Your friend Mark! Hope your frend is doing better!
