Huevos Rancheros

Sorry about the picture quality on this post folks. I made the rancheros during the blizzard and was cooking by kerosene lantern light.


I had a couple of smoked potatoes and a smoked onion from my venison canadian bacon cook.
I sliced the tatoes and onions and fried them in a bit of butter.....




I sauted some minced garlic and jalapeno in oil and added 1 pint of cubed tomatoes and some green chilies.

They simmered for about 10 minutes..




I heated my corn tortillas in the tomato/chilie mixture....



Then fried two eggs...
I layered my smoked/ fried tatoes and onions on top of the hot tortillas, added a layer of the tomato/chilie mixture, topped with the fried eggs....
Sprinkled with shredded monterey jack and cheddar cheese...then topped with chopped venison canadian bacon.




It was pretty tasty!

OMG Jeanie! Really, I seriously need to stop viewing your blog while I’m hungry. You really have no idea how good those Huevos Rancheros look. I still have 3 more hours till I get off work….damn I’m hungry and my stomach is rumbling now!
