Making Hollandaise Sauce

This is my favorite Hollandaise Sauce. It's easy to make and it's easy to personalize to suit your taste.

Start with 3 fresh egg yolks...




Add 1 TBS of fresh squeezed lemon juice.



Whisk over low heat.
Add 1/2 cup of cold butter.....cut into cubes and add a few at a time.



Season with salt and pepper to taste, a dash of cayenne or chervil...the choice is yours.
It's great over eggs or just about any veggie dish. :)
