Another campfire breakfast from my last trip to the lake....
I started a skillet of fried potatoes with onions on the fire,
seasoned some pork chops, dipped in an egg milk bath and dredged in flour..... then back into the egg milk and flour for a double coating.
fried until crisp and golden....
Then set the chops on the low-heat side of the fire...
added flour to my pan drippings for the gravy...
Then milk and seasonings..... I let the gravy simmer until thick and creamy.
While the chops were frying I cooked a skillet of bacon, then fried a few eggs in the bacon drippings... ( I was trying to use up the bacon, this was the last meal of the trip)
The chickenfried pork chops with skillet gravy, fried potatoes and onions... with eggs and a bit of fruit..
The chops were so good... tender and juicy in the center, crisp on the outside....
I need to make this at home sometime. I eat better when camping than I do at the farm!

You know this is the same recepie that I also love to make. I always buy my chops from a good butcher I know who cuts them 1 & 1/2 inches thick. It keeps them moist on the inside and tender, instead of dried out.
Have you tried fried okra with the chops and gravey? Just a thought.
As always you have a killer meal laid out. Wish I was there.

Did you fry the porker in its own fat? Butter for the potatoes?
The grilling is to actually get them to an higher coretemperature (let 'em cook some more), or just to let the crust dry, or to let them rest/settle?

Love the chicken fried pork chop for breakfast, lunch or dinner for that matter. If you had done grits you would have had a full Southern breakfast.
Those look so good, makes me want to pack up and go camping!

I probably was cooking for half the campsite.
There was only one other camp of people that morning and I think we out-numbered them. lol
I used oil to chickenfry the chops and the tatoes. I always take a jug of oil in case I'm lucky enough to catch some fish to fry. :)
I set the fried chops on the warm spot of the grill to keep them warm while I make the rest of the breakfast.

I do eat better when camping than at home. Something about that wood fire, everything tastes so good.
It's been so hot here, I've not cooked much at all since the camp out... just eating salads and sandwiches.

That grate is so handy.. you can move food off the heat. You can also add more logs on one side if you're doing a really long cook.
