Not sure if I remember how! lolThis was a venison shank cook I did from a whitetail buck from this year's rifle hunt. Some of the venison from rifle season. I always process my own. lol I trimmed the shank and used the sawsall to cut it into portions..I cut around the meat with a knive, then use the saw on the bone..I gathered some herbs, cowgirlhttp://www.blogger.com/profile/02516076315691432589noreply@blogger.com6tag:blogger.com,1999:blog-1516940939413771830.post-78923681735928786522022-12-02T12:42:00.001-06:002022-12-02T12:42:39.151-06:00Still Alive and Kickin' I haven't posted in ages... but things are going fine here! I've been cold smoking butter but go through it so fast, I decided to can some to have on hand.I went with 5 pounds of salted butter and 5 pounds of unsalted. Blending the two gives the butter a smoother texture than 100% salted. imoMade my usual blend of coarse salt, cracked black pepper and garlic.. also a cowgirlhttp://www.blogger.com/profile/02516076315691432589noreply@blogger.com14tag:blogger.com,1999:blog-1516940939413771830.post-54173503011265055162020-07-15T23:13:00.002-05:002020-07-15T23:13:59.469-05:00A Simple Cheese
This one is really easy to make and you can add your own touch, your own favorite flavors and herbs to the mix.
I heat one gallon of milk to 175F degrees..
Stir in one cup of white vinegar...
Strain through cheesecloth..
I added salt to taste and about 2 tablespoons of butter...
I didn't use a cheese press. I just pressed it into a bowl, covered it cowgirlhttp://www.blogger.com/profile/02516076315691432589noreply@blogger.com12tag:blogger.com,1999:blog-1516940939413771830.post-6786077222391798092020-02-08T19:40:00.000-06:002020-02-08T19:40:19.032-06:00Hickory Smoked Beef Manicotti
This was an easy meal that turned out tastier than I had anticipated. It would be easy enough to toss into a 350F oven til hot and bubbly, but I wanted to cook it in the drum and let it catch a bit of smoke.
I made a batch of my favorite meatloaf recipe. Any meatloaf recipe will work.
I stuffed the mixture into uncooked manicotti pasta...
I spread a bit of store bought marinara cowgirlhttp://www.blogger.com/profile/02516076315691432589noreply@blogger.com11tag:blogger.com,1999:blog-1516940939413771830.post-38238250773266002042020-01-18T22:05:00.000-06:002020-01-18T22:13:05.310-06:00Chinese Scallion Pancakes
I've been making these for years and usually call them Chinese pizzas. I think they are referred to as pancakes in most restaurants though. lol What ever they are called, I love em and they are so easy to make!
Start with 2 cups of all purpose flour....
Add one cup of boiling water...
knead for about 10 minutes until smooth. Cover with a damp towel and let the dough rest for 35 cowgirlhttp://www.blogger.com/profile/02516076315691432589noreply@blogger.com4tag:blogger.com,1999:blog-1516940939413771830.post-46242380457232522522020-01-11T21:19:00.000-06:002020-01-11T21:19:47.949-06:00Bacon Wrapped Shrimp.... With Home Canned Bacon
I've been using the bacon that I recently canned. So far, I like it.
The canned bacon is not crisp, but either cooking it in a frying pan or zapping it in the microwave for one minute does the trick. It crisps right up!
I butterflied a few shrimp, stuffed them with a slice of pepperjack cheese, wrapped in about 1/2 of a slice of bacon and tossed them cowgirlhttp://www.blogger.com/profile/02516076315691432589noreply@blogger.com4tag:blogger.com,1999:blog-1516940939413771830.post-47467773587970343772019-11-26T22:57:00.000-06:002019-11-26T22:57:59.218-06:00Canning Bacon
Canning again. I feel like a squirrel, putting things away for the winter! lol
I've tried a few of those shelf stable, half cooked bacons that are ready to eat after zapping for a few minutes in the microwave. They are quick and handy to have, but I wanted to make my own and save a bit of money.
I'm not recommending this method... just posting how it worked out for me.

I like cactus, but don't think to make it very often. The pasture is full of prickly pear. I use the fruit for jelly and wine and usually grab the younger cactus pads for cooking. This time, I grabbed some larger pads that were at the grocery store. I hoped they would be cleaned, but they weren't. lol
Some jelly....

I never quite know what to call this dish. It's a comfort meal of venison, morels, herbs and a good dose of bourbon. It's warming!
I'm using some white tail buck from last rifle season.
Seasoned with cracked black pepper and coarse salt.
Rolled in flour and browned in bacon drippings...
I just brown them lightly, they're not cooked through..

It's been a busy year, but I found the time to go camping a couple of times. Went to my favorite little lake. It's a small fishing lake, no swimming or skiing allowed. I like the quiet there...
I make this breakfast almost every time I go camping. It's fairly easy to put together and it's so tasty!
I start the fire in the tractor rim, then get some sausage in the pot to brown...

It was a bountiful summer here! The rains really brought on the wild sandhill plums, mulberries, morel mushroom, wild onions, etc.. I made full use of all of them.
Headed to the lake for a few days of camping..
Stopped by one of the many plum bushes, to gather a few for one of my venison meals at the lake..
I also brought some of my homemade sandhill plum jelly...

Been awhile since I got the comal out for a taco cook. It's so handy to use, I cook in the center and keep the food warm around the side til time to eat.
I use my fancy cooker, set a ring in the center to hold the comal steady.
I started with some onions.... I add a bit of oil to the top of the comal, the fry the onions..

Blackstone Griddle Style
I've made a few pizzas on the Blackstone griddle and am happy with the way they turn out. They might not be considered to be "real" pizza, but they'll do!
This was pretty quick and easy... I made the pizza just how I like my bacon cheese burgers.
I browned some burger and onions on the griddle...
Scooched them over and added a pre-made pizza crust. I let it go til brown and crisp.

I make smashburgers on the Blackstone griddle fairly often but wanted to try something different. This recipe belongs to my sweet friend. (If you see this, Thank you for sharing)
You can make it as mild or as spicy as you like by adjusting the amount of spicy Italian sausage you use.
I went with 1/4th spicy Italian sausage, 1/4th mild Italian sausage and 1/2 ground chuck..

This is a dish from my childhood. I remember Mom and aunts spending pretty much the whole day stuffing heads and cooking the "gravy" for a huge family feast. When Mom passed, I made sure to save her recipes.. This one brings back good memories for me!
I don't measure exactly, but I make it the way I was shown by Mom.
I saved a few heads from my last crawdad boil.

Recently raised another batch of flavored game hens for the freezer. Went with the same feed I used last time and flavored the birds with a mixture of garlic, ginger, scallions and corn. I really liked the way the last batch turned out.

One of the unpleasant sides to raising critters, is you have to protect them from danger. Rattlesnakes can cause a lot of harm. They are removed or dispatched depending on location around the farm. I decided not to let this one go to waste after dispatching, and cooked it up for supper. This was a Prairie rattler.
After removing a rattler's head, bury it so no one will get hurt.
