Eggs Benedict Country Style

This has to be one of my all time favorite breakfasts. Start with fresh gathered eggs and homegrown homemade canadian bacon. MMmmmm, good way to start the day. :)

Homegrown/homemade canadian bacon.

Some fresh eggs from my girls.

I used a brown egg and a green one. :)

Poached the eggs in a water bath spinkled with a touch of rice vinegar.

Lightly browned the bacon in butter.

Toasted my muffin in the bacon drippings for added flavor.

Ready to assemble.

Topped with hollandaise sauce (recipe follows)...and sprinkled with fresh cracked black pepper.
