Homegrown/homemade canadian bacon.
Some fresh eggs from my girls.
I used a brown egg and a green one. :)
Poached the eggs in a water bath spinkled with a touch of rice vinegar.
Lightly browned the bacon in butter.
Toasted my muffin in the bacon drippings for added flavor.
Topped with hollandaise sauce (recipe follows)...and sprinkled with fresh cracked black pepper.
