I've smoked bologna in the past but wanted to try something different this time
I tried the bologna 3 different ways...First hunk is scored, rubbed with olive oil and sprinkled with peppered bacon salt....
The second piece is butterflied, spread with a cream cheese, onion, garlic mixture, then topped with minced jalapenos and bacon
Then topped with pastrami slices...
Rolled and wrapped with bacon...Smoked both with hickory.
The third batch was cubed, seasoned with pepper, dipped in beer batter and panko, then fried.
Served with jalapeno cheese, pineapple, cheddar, olives, strawberries and hot peppers...
The cream cheese, garlic, onion, jalapeno, bacon rolled bologna....
The beer batter/panko fried bologna with spicy brown mustard...
They were pretty tasty!

I noticed it was Bar S bologna; that brings back mixed memories. When I was forced to have to truck drive for a living for a couple of years, I used to haul the spices that go into their bologna, from the factory that created the spice mix in West Point, Mississippi, to the factory in Oklahoma, I forget what town. I'm sooo glad I'm not living in a truck anymore...

Not a huge bologna fan, but I might have to try the battered and fried ones.

Mike, I'm not a huge bologna fan either. It has been a little over a year since I last tried it. lolol
I liked the fried, but when it was hot it tasted a lot like a corndog. I liked it better cold for some reason. lol
I liked the stuffed one...the stuffing tasted like an ABT with the jalapenos, cream cheese and bacon.
The scored bologna was tasty too with the jalapeno cheese and olives.
I guess the fried might have been my favorite. :)

lol Mark... I just had some anasazi's with smoked bologna for supper. It wasn't bad! I used bacon drippings, onion, garlic, beef broth and a cayenne pepper like you said you tried in the mixed beans.

I love the recipe of the fried smoked bologna! I have smoked bologna, just smoke it with some rub on it and then slice it off and throw it on the grill with mayo and a slice of tomato from the garden~!
