I gave these extra thick pork chops a quick cure by sprinkling them with tenderquick (1TBS per pound of meat)...then shaking off any excess. I wrapped them and let them chill /cure for 2 hours..
I sauteed some chopped onion and minced garlic in butter, when tender I added my cubed apples... (about 1 cup)
Then I added browned sausage.....
Also added chicken broth and enough seasoned bread crumbs to make it hold together but stay moist. Also check for salt and pepper....
Rinse the cure off of the chops....
After the stuffing has cooled, I cut a pouch into the chops and filled them with the apple/sausage mixture... then sprinkled with pepper (no salt needed)
Into my drum smoker with a bit of apple wood...
I let them smoke for a little over an hour at 300 degrees....
The curing process keeps the chops moist and tender.....
They were down right tasty! :)

Last night we had apple slices drizzled with caramel, cinnamon and sugar donuts and cider for desert. It is apple time. I want to try this. Just stuffed some green peppers for dinner tomorrow.
I will be hunting so when I get home I just pop in oven. Tip; use V8 juice instead of water when cooking rice. Nice robust flavor.
