Macho Mayo Zesty Roasted Green Chile and Spicy Roasted Jalapeno Sauce





The kind folks at Macho Mayo  (formerly known as Mannaise) sent a couple of jars of their dippin' sauce for me to try. All I can say is Wow! Love the stuff!
They have two flavors, a Macho Mayo Zesty Roasted Green Chile and  Macho Mayo Spicy Roasted Jalapeno. The sauce can be used straight out of the jar for dippin' or in your favorite recipes that call for regular ole mayonnaise. It's a great way to spice up deviled eggs, sandwiches, quesadillas or get creative and use it to spice up any boring meal.. :)

After giving them the pinky finger test I grabbed a bag of tortilla chips and went to town on em. Had to stop myself from devouring the whole jar before I could use some for cooking!

My first cook with the sauce was a Macho Mayo Zesty Roasted Green Chile Slathered Smoked Prime Rib. (Will post pics soon). Great change from the prime rib horseradish dippin' sauce routine.

Forgot to mention....
I'm not a huge fan of super hot food. I like to be able to taste the food without scorching my taste buds. Both the Zesty Roasted Green Chile and the Spicy Roasted Jalapeno sauce were not overpowering for me. They both had a great balance of heat and flavor. Great stuff!

Venison, Morel and Wild Onion Time





I make this every spring, as soon as the wild onions start popping up around the farm. It's one of my favorites!

I was lucky enough to find some morel mushrooms this year. I like to pair them with some of the white tail venison from rifle season and add a few wild onions for added flavor. The combo of wild game and wild gatherings just seem to go together.
Course I had to throw bacon in the mix this time. Just couldn't resist.



cleaned the wild onions and washed the mushrooms well...




sauteed them in butter til tender....then let them cool while I butterflied a piece of backstrap...




I gave the venison a quick 2 hr cure with Tenderquick, then rinsed well...



layered the backstrap with the cooled shrooms and onions...



rolled and wrapped in a bacon weave to hold things together....



into the drum til done...







I like to get the bacon  nice and crisp...





The morel, wild onion stuffed venison with extra sauteed morels (cause I love em). :)






The meal definitely brings back memories of deer season and morel hunting... two things I love to do!


Getting lots of rain here which is great!! Best spring I've seen in a long time. :)

Red Angus Chuck on Beer Bread




One of the benefits of living in beef country,  I'm surrounded by generous friends who are willing to share what they raise. In this case, some fresh Red Angus beef from a neighboring ranch. I raise Black Angus and love it but Red Angus ain't half bad. :)

Seasoned some Red Angus chuck with Big Poppa's Little Louie's Rub, then into the drum...



After catching smoke for 2 hours, I added onions and beef stock then foiled and let it go until tender...



Added a skillet of beer bread...

I mix 3 cups of self rising flour with
1/4 cup of sugar
a bit of salt
mixed with one beer







made a smokey cheese disc...





Started the build... Smoked chuck...


 caramelized onions...



crisp bacon...

slathered the lid with a horseradish sauce and called er good.









One of my favorite sandwiches! The Red Angus was tasty, I'll never admit (out loud) that it was as good as my Black Angus though. :)

New Deck





Latest project is a new deck on back of the house. The old porch has seen better days.
Used the old stock trailer to haul the deck supplies home...







I have one hold out who's not on board with the plan... Eddie



He loves the old porch!  He's been following me around, knowing I'm up to something.




I'm going to make him a special spot on the new one.  :)

Pulled Pork n Tater Waffles





One of those last minute decision suppers. I planned on making potato pancakes with a bit of leftover smooshed potatoes... but got kind of carried away.

The leftover potatoes...



Added about one TBS of baking powder, a little flour and a beaten egg. The potatoes were already seasoned with salt so I didn't add more.



Then came some chopped Hatch Chiles, pulled smoked pork and a few scallions...





Gave the waffle iron a spray of oil then scooped about 1/2 cup of the tater, pulled pork mixture in each spot. I didn't have a full 2 cups so the lower right one got shorted.



I checked the waffles and tasted the small one....



decided to leave the others in longer to "crisp" a bit more...

Topped with a fried egg...







I'll be making these again. The waffles had great flavor, were crisp on the outside and tender in the center. They were a lot quicker to make than the potato pancakes I had originally planned on making. (no flipping).

Another good use for leftover pulled pork too!

The weather has been great here! Actually getting a bit of rain, the grass is turning green and right now my rose bush is blooming. I try to pick fresh flowers every day and bring them inside....the house smells so sweet. :)
