Smoked Prime Rib.... Macho Mayo Roasted Green Chile Style



Had the chance to try out the Macho Mayo Roasted Green Chile sauce the other day. Went the smoked prime rib route.

I slathered the prime rib in the Macho Mayo sauce then sprinkled with a bit of cracked black pepper...



into my horizontal woodburner with a kiss of mesquite...



Added a few tatoes rubbed with olive oil and sprinkled with coarse salt and cracked black pepper...



Brought the rib roast up to an internal temp of 128F then let it rest...


 The resting roast. It fell over so I left it that way.... but it does look like it's resting. lol






While the prime rib was resting, I fried some Hatch Chiles in spiced up cornmeal....
made "rustic" smooshed tatoes with the smoked potatoes and supper was ready.


Added a nice dab of Macho Mayo Roasted Green Chile sauce for dippin'.
Great change from the usual horseradish sauce!!

Loved this sauce!  It can be used straight out of the jar for dips but slathering the prime rib before smoking made a nice, tasty bark. There are so many directions to go with this stuff,  I'm looking forward to experimenting. :)

They also make a Spicy Roasted Jalapeno which I tried on a pork roast the other day. It was great!! Will post that cook asap.

Hope everyone is having a nice spring. It's been a bit busy here. The calves are doing well, baby chicks are running around the farm. No piggies yet but there will be soon,
The rain has been a blessing here. Everything is nice and green now. Looks like we will have a good crop of wild plums too.
On the down side. Lost a family member this week... it was expected but still hard to take.

Have decided to go camping for a few days, I hear the catfish are biting!
