Hickory Smoked Onion Rings

I love onion rings and I love smoke... what more could a girl want? lol

I place a sliced onion in my drum with a bit of hickory. Smoked them as long as I could at 300 degrees. I didn't want the rings to cook, just take on as much smoke as possible..

Then I bagged them until I was ready to fry them up.

I used a beer batter...

1 cup of flour

1 tsp salt

1 tsp baking powder

enough beer to make a pancake like batter

(about 3/4 of a beer)

I used Tecate in this.. stronger beer such as lager will over power the smoke flavor.

I flour the rings before dipping in batter....

fry til golden...

season with salt....

I like em. :)

Rings look delicious and I'll have to try smoking some. We use a beer batter and for a little more crunch, we use a little thinner batter then roll in panko after battering. We use it for crappie as well.

What would be even better is once you have the thick cut smoked onion rings. get some bacon to go around the rings then batter that and add panko!
Serious, I'm sure it would be sooo good.

Prettytastyreviews.. I do love bacon! :)
The onion smoke is so mild, the bacon flavor would overpower them.
You could skip the smoking process and just wrap, dip and fry.. Bet those would be tasty!
Thanks!
