This first picture is an old picture of some hens I did last year or so ... but I brined these the same way.
Used a mixture of water, kosher salt, black pepper, onion, garlic, bay leaves.
I placed sliced little smokie sausages and butter under the skin....
Sprinkled the hens with some Rooster Booster..... made by a talented smoking friend (Smoky Okie) here in Oklahoma.
Into my drum smoker at 325 degrees F with some potatoes, onion and the covered rice.
( I like to smoke poultry at a high temperature)
I uncovered the rice for the last 30 minutes....

Do you have any problems with flare-ups when you take the lid off your drum at that temp?
I plan to try your beer bread in my drum tomorrow, then a BCC either on the drum or the CG.

Sometimes the temperature does rise while I have the lid off. I had a flair up about a month ago while smoking three or four bacon wrapped fatties. The bacon drippings were adding to the build up on the bottom of the barrel.
It had been a long time since I had cleaned out the barrel.
That was the first and last flair up (so far). lol

I agree with you, it is a small world and there are so many nice people in it... I've been fortunate to be able to meet folks like you and Mark through this blog.

I like the idea of stuffing meat up under the skin. I've done lemons, butter, and such, but never more meat. Damn you're a genius!
Ooooo, now I'm *craving* chicken. That looks mighty tasty! It makes me want summer to get here quickly so I can put some of those on my rotisserie!

You aren't gonna believe this one. You know how you see the first thumbnail picture---I thought the picture of those hens was some kind of huge exotic flower floating in a bowl. I know huge imagination/poor eyesight. Then when I saw it I just lost it - it looks like they've got their elbows over the edge and are sitting in a hot tub. Do I have to much time with these dogs? I must be losing it. But in a good way :O)

ahh those look great! i love smoked game hens and rice. it's easy and not a long smoke. i usually stuff them with the rice, but i still need to try putting these things under skin. once it warms up a little i might have to do that.
