Chickenfried Canadian Bacon

I really love this stuff! Doesn't get much better than chickenfried, cold smoked Canadian bacon.
Making it over the campfire in a cast iron skillet kicked it up another notch for me. hmmmmmm... I'm a happy girl! lol




I used some of my smokehouse bacon....




Sliced it fairly thick....



Dredged the slices in flour, dipped in an egg/milk wash, then back into the flour....




Then chicken fried in my skillet over the fire....



Fried some hashbrowns and eggs...















Made a pan gravy with the bacon drippings and then toasted some english muffins....




Topped a toasted muffin with the chickenfried canadian bacon, added an egg and poured pan gravy over the whole works....














The outside is nice and crunchy while the center is moist and tender....


Hmmmmmm.... I forgot what I was saying... .......oh yeah. I really liked it! :)

Mark, I'm thinking I would like just about anything chickenfried. lol Wonder how a thick slice of ham would taste fixed this way?

Wow - this looks great. I make my own CB but never thought of chicken fried. You're creative

Thank you Big Dude! Hope you give it a try. It works best with cold smoked CB, if it's hot smoked or cooked, it can be a bit dry. Guess a person could just fry it faster..get a quick crust on the outside. It might keep the middle moist. (thinking outloud lol)

Chicken-fried ham! What a great idea. Our 15 year old daughter stumbled across fried ham at a diner one day. She'd eat it 7 days a week I think.

She also loves chicken fried steak and fried chicken. Chicken fried ham oughta make her day. For about 5 minutes. Then we'll be stupid again...

Chicken-fried ham does sound good! I need to make some. :)
This canadian bacon stays nice and moist inside and crispy on the outside.. I bet a hunk of fresh cold smoked ham would be tasty too.

Hi Steve... Thanks! :)
The grate is homemade. It's a piece of expanded metal with a 1" tubing frame.
It really works out well over the fire, I'm able to move food or pans to the edges to get them off of the heat but still keep them warm.

It measures about 3'x 2'... you can make them any size. I use this one with my tractor rim fire ring.


My horizontal wood burning smoker/cooker also has grates made this same way.

Hope this helps Steve. They are easy to make and last forever.

The middle of the grate does have a section of tubing running across to keep the grate from warping.
