I love frog legs :)

While fishing by moonlight the other night, I listened to the frogs croaking in the distance.
All I could think of is how much I love frog legs. :)
Instead of taking a good flashlight and gig back out to the lake, I visited the local grocery store and picked up a few. (yeah I'm lazy!)



I cut some of my catfish fillets (I caught a few keepers) into nuggets and let them chill in lemon juice for an hour.



Then made a milk, kosher salt, garlic powder, onion powder, cayenne bath for the legs..
I let them soak for 30 minutes.



Dipped the catfish nuggets in a cornmeal, flour, kosher salt, cayenne, lemon pepper mix and fried til golden..



Dredged the legs into a flour, kosher salt, black pepper, poultry seasoning mix before frying..
I do not measure the ingredients... I just eyeball it and take a pinky finger taste.





The legs were soooo tasty.....



Maybe not the cutest frog legs I've seen but I loved em! :)

I just can not do frog legs. I had them once and just couldn't get the visual out of my head as I was eating them, ha ha.

You are such a great cook. Have you ever considered turning your place into a working vacation ranch where the dude's could help you out, go campong at the lake for a fish fry and have all around great food for a week?

Those look fantastic! I have never seen frog legs at our grocery store :( Our farm pond is loaded with bull frog tadpoles this summer, maybe I can harvest some when they grow into frogs.

Hi cowgirl! That one fine looking meal!! I love frog legs and catfish!It's been a long time sence me and my dad went out to catch a mess of frogs. It get's kinda interesting with the gaters and snakes swimming around! Next time I go south to see him we'll have to catch a mess:)Funny I've never thought about it till now but how many does it take to make a mess? Any idea? Cowgirl, I am so glad you posted about frog legs. My father used to cook for a restaurant and frog legs was one of his specialties. Reminds me of him.

Haha Mark, Your frog gigging sounds a lot more exciting than mine. No way could I get in the water if I thought there were gators or snakes. lol
I agree with you...not sure how much a mess is but it's always just enough. :)

How do you get the Flour to stick to the meat? I have always had a problem with this. I have tried several ideas of drying the meat, soaking the meat in butter milk, etc.

I have this same problem with fried chicken. I do not know but it may be because I pan fry and not deep fat fry.

What do you think?

Hi Jim!
I have better luck when I double dip. I dip in the seasoned flour and back into the milk bath and then into the flour again.
Then when I pan fry I make sure the bottom is brown before turning them over. Not sure if that helps ya much but good luck! :)

I just started reading your blog, you've got some awesome things on here. I happened to catch your comment about selling your place. Where do you live in Oklahoma? I live in Guthrie, and will be looking for a new house soon.

Thanks Anonymous! I'm in the western part of the state... with the yucca and sage.
it's so hot and dry right now, I'm sure you're catching the same heat in Guthrie.
I won't be moving until I find an affordable island. lol I'm not holding my breath.
