Another one of my favorite things to make when camping. These pics are from the last camp out a couple weeks ago.
When I am going camping I plan meals in advance then take only the things I need for the trip. Thus the sherry and capers for this cook. :)
I cube the potatoes and simmer until tender in salted water...
while the potatoes simmer I saute minced onions, scallions and garlic in butter...
drizzle the chicken breasts with oil and throw them on the fire....
When the tatoes are tender, drain, add milk and some of the butter, onions and garlic from the skillet...
rough smoosh the tatoes ( I use a fork) and season with salt and pepper if needed...
Add 2 Tbs of capers to the butter, garlic, onion mix...then add sherry and fresh squeezed lemon juice. (about 2 TBs each)...
Place the grilled chicken breasts into the sauce and turn to coat all sides...
I spoon a bit of the sauce over the tops of the breasts too...
The campfire chicken piccata, garlic smooshed potatoes, fresh veggies and fruit..
I really love this when camping. The addition of the fire grilled, smokey flavor makes it pretty tasty. :)
(I know... everything tastes better over a campfire. lol )

Cowgirl, you did it again. Let me be the first to say that you have just sparked up my appetite. It is 6:30am and I am getting ready to go to work at the firehouse and I now am longing for what I just read.

I'm dang lucky to have hot dogs and chips. Mostly it is cold beans FRESH out of the can, mmmmmm mmmmmm good, and B E E R !!! (makes everything taste better) ::) when I go fishing....

lol Rick!! If you take beans you eat beans, if you take chicken camping you have to eat chicken.
Nothing wrong with hot dogs and beans though... they even taste special around a campfire.

Wow, this reminds me that cooking over the open fire is the best way to go no matter how hot the summer gets!
Hay cowgirl! Great looking meal I can almost smell that chicken cooking. Havent herd you say anything about your garden. Is the dry weather takeing it's toll or are you able to water it? It's been dry here too but not as bad as yall! Hope you get some rain soon! Can't waite to see what your going to cook next so my mouth can water again!! The garden is suffering. I water it but the high temps and hot wind are really taking a toll on the plants.
I build a shade and wind blocks for the tomatoes and green beans but the cucs and squash are just about withered up.

I know what you mean... I've eaten my share of smoked oysters on a cracker and bologna sandwiches while fishing... they taste darned good too! :)
The little flowers are still pretty. I have really enjoyed them.
Didn't know something so simple could make such a huge difference. Really brightened my week. :)
