Smoked Codfish Tacos with Chipotle Slaw

I've made these before, but usually on a grill. This time I wanted to try them on my drum smoker...

I made my chipotle slaw,
Mixed 1/2 cup of mayo with
1 chipotle pepper in adobo sauce (minced) you can use more
salt to taste
chopped onion
fresh squeezed lime juice. about 1 tsp.



Mixed with 1 package of pre-shredded slaw ....then chilled.


I rubbed the cod with olive oil and sprinkled with some home made seasoned salt and cracked black pepper...


Into my drum smoker with a bit of olive wood....


They smoked for about 1 hour. I just tested them by poking......




Heated a couple of fresh tortillas...



The smoked cod was wonderful by itself. :)


My smoked codfish taco topped with chipotle slaw and a bit of fresh pico de gallo...


It was pretty tasty!! :) I plan on using my drum for these again.

We're going to have to try that over here in our TN holler. The Mrs makes awesome homemade soft four tortillas. I had never thought of putting chipotle in slaw, but that just looks and sounds awesome. Thanks for the recipe idea...

YD, I hope you give them a try sometime. Cod is my favorite. it's pretty mild and takes the smoke well.

I bet they would be great with your Mrs.' tortillas!
I love that slaw on pulled pork sandwiches too....you can add as many minced chipotles as you like to kick up the heat.

Hey Cowgurl, I notice you use store-bought chipotles. Im getting ready to smoke my own and wondered if you have ever made chipotles. If so, any tips/hints?

Hey girl! I had grilled fish tacos Saturday night! Did some spicy shrimp bites too. Must be the warm weather making us crave seafood. They were good but I want my fish still flapping when it hits the grill, lol. I will be ready to catch my own in less than two weeks!

Hey Marty, How are you?
I have just cold smoked my jalapenos for chipotles. I use my smokehouse and a temperature of 65 degrees or so.
Also smoke the longer the better...6 hours or more.
Hope you have good luck with them. let me know what you come up with!

So you get to go fishing in a couple of weeks? That sounds nice. Got room on that boat for one more? lol .... I have fishing fever pretty bad. :)

Sure Jeanie, you are welcome anytime. I got the fever bad too, lol. Reports are starting to show the first spring fish moving in. The water is still too cold yet, but soon...

I'll provide you with a full report! Does it have to be the truth? Haha.

Think I'm going to give this a shot tonight, being Lent and all. What temp do you figure you smoked the cod at?

Hi Mike,

I smoked the cod at a fairly high temperature.. around 315. Then just checked it with a fork to see if it would flake.
Some cooked a bit faster than others due to thickness.
