Bacon...my favorite food group! :)
I love this stuff . It rates even higher than chocolate for me. lol
I used some of my cold smoked "steakhouse" Canadian back bacon that I made not long ago..
Cold Smoked Bacon
Cubed the back bacon....
then wrapped it in strip bacon....
Sprinkled some with cayenne brown sugar and sprinkled the others with cracked black pepper..
Into the hot smoker ( I used the Hasty Bake) with a few hickory chips. Hot smoked until cooked through...
They were so moist and tender on the inside. I absolutely love these things!
.... my eyes rolled into the back of my head and I let out one of those little whimpers when I took the first bite. :)
Wonder if I could polyurethane a couple of these and make a pair of earrings? lol

Even though I read the post and left a comment, the fact that you were cold smoking the Canadian bacon, etal didn't register. As well as you cook, when something gives you that kind of reaction, I know it must be outsatanding. I don't have a cold smoker, but think I can make my Stumps run as one duing the cold winter days. I must give this a try.

Thanks Larry! I like to cold smoke bacon so I have more options on how I cook it later. I bet you can get they Stumps low enough... good luck and let me know how it comes out for ya. :)
Hahaha.. Mrs JP, I do think we would have fun, wish we lived closer. I'd get you to help me paint those condensate tanks too!lol You've inspired me to dig out some tinsel and decorate for Christmas...

I don't think I've seen anything more delectable. wowow. Looks like there's some pepper on some... brown sugar on others? Bacon wrapped bacon.. Jim Gaffigan would be proud (comedian...check out his musings on bacon sometime on youtube...crazy funny).
