Easy Campfire Chicken Fajitas

I know I make these often while camping, they are soooo easy and quick....and they are actually kinda tasty! :)

The first meal I cooked while camping this weekend...





I always bring my own grate. This is the one from my tractor rim fire ring....


I start the peppers and onions then grill the marinaded chicken..

I marinaded some boneless chicken thighs for about three hours, that's all the time I had.







Heated a few tortillas and that was it.



So quick and tasty...



Topped with a bit of fresh pico..





I'm pretty sure everything tastes better when cooked over a fire. :)

Boy that lake is really low! Looks like the fish might need "track shoes" to move around....:) Our lakes, ponds etc. were low also UNTIL this year, but most are now full.
As always good looking grub.
I think summer has arrived in OK, find some shade and stay cool...:)
We're in the 80's this week then back to 90's & 100's again.

Love your explanation for the length of marinade time!

I make fajitas a lot too and never get tired of them.

I agree with ya Jeanie. Things do taste better when cooked over an open fire. Your chicken fajitas are looking pretty scrumptious.

Rick the lake is really low. It's not a deep lake in the first place.
I'm going to take your advice and stay in the shade. :)

haha Chris, I'm bad about that. I use a "hunka" pork and a "dash" of this or that. Not the best at measuring things.

Thanks Mark! Have you had the chance to grill a steak lately? I know you're keeping busy.
I think of you every time I camp someday I will make meat on a stick again. :)
