Pete requested the biscuit recipe posted with my venison stew... I just use a basic biscuit recipe and add shredded cheese and herbs.
Here is the basic recipe Pete!
2 cups of flour
3 tsp. of baking powder
1 TBs of sugar
1 tsp of salt
add 1/2 to 3/4 teaspoon of your favorite dried herbs.. fresh herbs are fine. I like to add basil, oregano, thyme, just a mixture..... chives are great too.
mix well then add 1/4 cup of shortening.
Cut the shortening into the flour mixture with a fork or pastry blender... it should look like meal when finished.
Add shredded cheese...
I eyeball this but probably add 1/2 cup. You can use any of your favorite cheese... smoked provolone, cheddar, just anything you like. :)
Mix cheese in lightly then add..
3/4 cup of milk.
Blend the milk in and pat the dough out, then cut your biscuits. Or you can just form the biscuits by hand.
I like to brush the tops with either butter or an egg wash before baking but you don't have to.
Bake 450 degrees til light brown... about 12 minutes.

mmmmm...biscuits. Just printed out the recipe so I can try these next time I make soup or stew. Which should be soon given our winter-like weather here lately! Thanks.

I have a friend that makes biscuits that are sublime. His trick is to use cake flour. You might try that sometime. If you do please let us know what you think.
