Drum Smoked Zucchini with a Ribeye

I had planned on fishing yesterday but friends stopped by... so I threw some food into the drum smoker and enjoyed the evening.

My zucchini is really starting to produce. One of my favorite ways to fix it is stuffed and smoked.

I cut them in half and used a spoon to remove the seeds... then seasoned them with kosher salt and cracked black pepper..




Mixed some spicy pork sausage (1/2 lb) with minced onion and 3/4 cup of seasoned bread crumbs.


Filled the zucchini halves...



Put them into my drum smoker with the ribeyes and some hickory....


I let them smoke for 1 hour and then topped with fresh parmesan cheese...




After smoking for an hour, I seared the ribeyes over a hot flame....








The smoked ribeye, zucchini, fruit and salad....






They were both really tasty. I plan on making these again soon. :)

I think ribeye might be my favorite food....well then there's crab and shrimp....and smoked beef ribs....never mind. lol

ok,,now I'm hungry. I think my neighbor planted zucchini...and I'm chicken sitting for her for the next couple of weeks. I also get to pick her garden while they're gone..Yippee!

Hey Jeanie, can you send me a plate of that in the mail? lol. Just got home from work and hungry, eating canned soup and you go and show me something like that? Lifes just not fair sometimes Jeanie.

I didn't think about it before but it's sure not a plate for a vegetarian. Meat with a side dish of more meat. lol

I've had my share of canned soup too Mark, It's nice to keep on hand.

I figured they would be working you hard this week. Hope things slow down for you soon.

lol Thanks Anonymous! I'm glad to hear the pics did justice. I use a point and click camera and know nothing about photography. Some day, if I get the time, I would like to learn more about it.

Right now I cook and take pics...and spend the rest of my time feeding, watering and taking care of the amimals. :)

Being from Oklahoma, you can probably relate to that! :)
