Brrrr.... It's cold outside :)

Hope everyone is keeping safe and warm this winter. :)
I know Oklahoma has had it's share of cold and ice the last few days....

My windmill is in need of repair ( busted well rod) so I've been chopping a lot of ice on the pond for the cattle and horses. :)
I'm thankful that I have the little pond, sure beats hauling water to the livestock. :)
Hopefully I will be able to fix the windmill this weekend.


One thing I've learned in life....be thankful for what you have and no matter how bad things might seem at times, they could always be worse. :)

wish i lived closer to oklahoma to help you fix your windmill it sounds like a lot of work hope you get it fixed soon oh wait i work for the county i should say i wish i lived closer to oklahoma so i could watch you fix your windmill LOL i am good at watching other people work LOL

I know you're a hard worker, I've seen the great homemade sausages you make and the salmon you smoke...Arent' you getting ready to butcher a few more pigs soon too?
You're a busy guy! :)

I hope the windmill will be an easy fix. Right now it looks like I just need to replace one rod. I'll see what all breaks while I'm trying to replace that one rod. lol

my weekend starts tonight i took tomorrow off i have a few things to do and for the super bowl i am gonna do a brisket and i want to make some snack stix for the game so the smokers will be going all weekend
the pigs will be butchered on or around feb 7 they are ready now but we wont have time until that weekend
plus the rabbits are gonna have babies so we are gonna try and butcher some of those when they are ready in about 8 weeks that will be another new experience for me it should be fun you take care

I know what you mean about the pigs being ready and you're not. Same thing happened to me on these last two. If I lived closer, I'd help ya.


Good luck with your rabbits...those meat rabbits get pretty big and sure are tasty. :)

Hope you take pictures of that brisket and the snak stix!

This repair job on the windmill might just call for a welder????

Jeane, my Tender Quick came in yesterday so I will be preparing my Canadian bacon (both recipes)today. Its going to be a long 6 days waiting for it to cure , so in the mean time I bought a nice big brisket to help pass the time, and to enjoy the superbowl with. Good luck with your repairs on the windmill and stay warm, its freezing here in the Carolinas' also.

lol Ken, I might be able to find something to weld on the windmill! That would be fun. :) :) :)

Glad to hear you have the tenderquick now! Hope the bacon comes out well for you. The dry method is the most reliable... but both usually come out tasty.

Brisket happens to be one of my favorites....Mmmmm! That's going to be a nice treat to go along with the superbowl. :)

The weather is starting to warm back up here in Oklahoma, I'll send some sunshine your way. :)

Jeanie. I have been reading all about smoking on your and linked sites. I want to build a smoke house but need to find the ingredients for curing as the names you use are not available here in Far North Queensland where we don't get cold, just wet, its now the wet season and we are having floods, and hot temp remains pretty constant at between 18 C and 30 C I like the talk of all the home made stuff that you lot seem to do. Maybe its because of the weather LOL. Harvey

Absolutely true, be grateful for what you have. Another thing I've learned is trying to be grateful for what I DON'T have. I figure the Lord knows better and there is a good reason for the things I have and even the things I don't have. I hope you get your windmill fixed.

Sounds like you are having some pretty wet weather! I could use some of that rain....please send any extra my way. :) LOL
It actually got up to the high 50's (F) here today, which I enjoyed. :)

The tenderquick I use for curing is made by the Morton Salt company. It's a mixture of salt, sugar, nitrates and nitrites. Blended for easy use.

You might be able to find other curing agents to use instead.

I hope you get to build a smokehouse, they are so handy to have. Please let me know if you do, I'd love to see pictures. :)
