I really wanted a pulled pork tamale...
and had a good supply of pulled pork on hand.
I made my filling of pulled pork and minced scallions...
soaked my corn husks...
made my masa....
combined enough water and lard to make the masa light enough to float...
then I looked at the stack of corn husks again and KNEW I didn't have time to make a normal batch of tamales..
I used two husks for the ends and cut a section of husk for the middle of the tamale... smooshed some masa out.....
placed the filling in the middle...
rolled and tied them...
I now had 4 foot-long pulled pork tamales. :)
I placed them onto a rack and decided to steam them in the Memphis Pro with some beer and wild onions. I used balls of foil to keep the rack above the beer.
I covered them to steam..
normal steaming takes about an hour. I checked these for firmness..
Next problem... I don't have plates that big! This was the longest one I could find.
The tamales were about the size of 4 normal ones. The middle section of corn husk didn't come out even with the end pieces but it worked.
I made a cactus rice salad to go with it...
It was very tasty! :)
These took less than half the time to make and I was able to get a few things accomplished while they steamed in the smoker.
I wrapped and placed the extras in the freezer for easy meals later.
I'll definately make them again. :)

BTW - I made some pork belly confit, then fries it up for tacos - If you have any spare pork belly - I highly recommend it!

Thanks so much SDBBQ! The diameter of the tamales were the same as usual but the length made them the equivalent of about 4 tamales.
