This has to be one of my favorite meals. I saved some of the smoked pork butt from an earlier smoke.... smoked pork butt
Set up my fancy cooker..
It's a section of pipe with rebar legs, expanded metal grate and an old burner from a hot water heater.
sauteed some onions, scallions, peppers and garlic in a little bit of oil...
added some of my smoked pork... and a small dash of fajita sauce...
heated through and added my corn tortillas...
This was self serve style... grab a paper towel, top with a hot tortilla, top with the smoked pork-onion mixture..
then drizzle with your favorite hot sauce and add a bit of fresh pico de gallo and a squeeze of lime.
The rooster was happy chicken wasn't on the menu again. :)
I love these plateless meals..
It was a nice afternoon sitting under the shade tree. :)

Seems like every weekend there are hungry people in my yard. lol
I didn't get to go fishng. The wind was just too strong. I would have had to put rocks in my pockets to keep from blowing away! :)
I do have sort of plans for the 4th... a family gathering at my house and I have no idea what I'm going to cook. I'm going to cook the meat and they are supposed to bring the side dishes..

I hope you have a wonderfull 4th with your family! We are starting Vacation Bible School for the youth in our community starting tonight. It will go through friday night when we'll have a fireworks show for them. It's alwayse fun for the kids. The big kids too! Of course we'll be grilling something! We will be praying for your family as they travel for the holidays. If they are anything like mine their scattered all over the country.lol Your Friend Mark! :)

For the spam posted on the Hasty Bake cook?
Smoke for one hour until the block of spam "blooms". Sprinkle with a cayenne/brown sugar mixture...then spritz with whiskey. Let it smoke for another 15 minutes or so until the glaze forms.
