How to Make a Fattie (Fatty) Piston

I've been asked several times to explain my fattie piston.
They are so easy to make.

Use schedule 40 (potable water grade) pvc.
Cut one 2" diameter piece to 8" in length
Cut one 1" diameter piece to 11" in length
Attach a 1 1/14" pvc cap to one end of the 1" pvc
cut a food friendly plastic disc to fit the inside of the 2" diameter piece.
Attach the disc to the smaller 1" section of pvc
That's it!
You can really make them any length or diameter that you want.
I roll my fatties inside of a one gallon baggie.. the baggies are about 10" across..
keep that in mind when you choose a length for your piston.





I stuff the piston with filling up to 2 inches from the top (for a fatty).

chill any cooked filling before laying on top of the sausage...





Ta-da....


Hope this helps... it's really simple to put together.

Not necessary for fattie making but so much fun to use. :)

You know Jeannie, I was thinking that If you used 1"PVC pipe and 1/2" PVC pipe for the plunger all about 18" long, you could make BEAR'S recipe for pepperoni or beef sticks without a casing. I just may try that.

Hi John! I still haven't tried your bacon recipe.. but hope to when I get time. :)
I don't read Bear's posts so I'm not sure what recipe he uses for pepperoni.
I bet a small piston would do the job of stuffing pepperoni and beef stick casings though.

I really dont know where to begin so here it goes. I was doing a search for "things" to do with bacon (not necessarily in the kitchen)and up popped your blog with this incredible find. After viewing your piston my nipples got harder than dry ice & when I saw this roll of heaven I knew I had to have one, honestly it wasnt more than five minutes I was out the door and on my way to HD to get some pipe (dont read to deep into that) then a stop at the grocery store and in less than 26 hours I have me a log of heaven, now granted I do not have a smoker so I had to do it in the oven, go ahead get a switch and spank me :)but kind of knowing how to cook helped me with this big gal & it turned out AWESOME!! I had 4 thick slices of this tender sow wrapped stuffed beast (then a smoke) and of course had some CO kool-aid to wash it down with. I am for ever indebted to you cowgirl for posting this!

Can you please tell me what to ask for at the store to use for the plastic disc on the end of the plunger?

Also, what kind of glue did you use to assemble, and how many pieces of bacon does it take to weave for the chubby? Thank you very much, Karen

Hi Karen!
I used a piece of plastic that came from a piece of kitchen back splash. Any food grade plastic will work, it doesn't need to be very thick. Cutting board material might work too.
I used a super glue, the glue doesn't come into contact with the food so it is safe to use.

It takes about 1 pound of bacon.. one package will cover a 1 pound fattie (not counting the weight of the stuffing).
A 1 pound package of Jimmy Dean Hot sausage is pretty good if you don't make your own.

One Question?

"Where" would one find a "food friendly plastic disc" that fits inside a 2" piece of PVC???????

Use a square of backsplash or countertop tile from a home improvement store.
Place a section of 2" pvc on the tile, trace the inside of the pvc onto the tile with a pencil.
Then cut the disc out with heavy duty sissors, tin snips, a hand held jig saw or even a drill press.
If the tile material is thin, make two discs and glue them together for strength.
