Smoked Beef, Chicken and Pork Tostada

This is some more company food from Memorial weekend....

I seasoned some chicken, beef chuck slabs, and pork hunks (had to skewer them) with olive oil, cracked black pepper and kosher salt...
Placed them in my drum with a small amount of mesquite...



Made some fresh pico de gallo...


Picked some fresh lettuce....



Smoked the meat for about an hour in my drum cooker...


Heated fresh flour tortillas.... I like them crispy for tostadas...






Started building.
First a layer of refried beans then some of the smoked beef....



Smoked chicken....


Smoked pork....



A bit of cheese....



The fresh lettuce and pico de gallo...



It was pretty tasty!



Again, my company didn't complain... woohoo! lol :)

I gotta come over sometime too Jeanie, and get a real taste. Just looking at all the pictures is driving me nuts. lol. I can't imagine anyone going home very hungry.

Hello Cowgirl,
I must say you are a real inspiration, (I am in the process of building my first UDS have drilled airlets and grate bolts and will do my burn tomorrow hopefully) and have been frequenting yours and many other BBq sites to gather information. (I just joined BBQ Brethen site tonight!)

I saw this post in particular and had to lol at the ad at the bottom giving tips for a flat belly!
After looking at the smoked pork and chicken I went downstairs had some cake and a glass of coke cos I was hungry....My hubby thinks I'm crazy how BBq crazy I am not that he complains when it's time to munch, but the neighbours here in Blighty believe there is a summer BBQ season that should be adhered to even though its not illegal, but they too dont complain when it's time for as munch lol.

Got too say thank you though your site helped convince my hubby that I wasn't crazy about to build a monstrosity and next year I'm going to work on getting some chickens!
