Smokey Chicken & Egg Noodles

I smoked a couple of hens the other day and have been enjoying the meat in a few different dishes..
I rubbed the birds with butter and gave them a simple kosher salt and cracked black pepper sprinkle.. Placed them into the Memphis Pro with hickory. Also used pans this time to save the drippings..





Made a batch of egg noodles...



You can tell which egg was store bought and not one from my hens.. :)

2 cups flour
1 tsp salt
add three egg yolks and one whole egg
mix well then add 1/2 to 3/4 cups of water







Divide the dough into fourths. Roll out one fourth at a time. After rolling the dough, I wrap it around the pin



slip the rolling pin out and cut the egg noodes with a pizza cutter...



then shake the noodles out and hang for 2 hours to dry a bit..



break into pieces as long or short as you want...



boil in salted water until tender...



I added some of the smoked chicken with pan drippings and about 1 cup of chicken stock. seasoned with salt and pepper...




Topped with cracker crumbs and dotted with butter. Also made a batch of bacon biscuits.
Smoked in the Memphis Pro until hot and bubbly.....about 45 minutes at 325F




It was one of those perfect days for sharing the wonderful aroma with my neighbor....
I parked the pot of smokey chicken and noodles with the rack of bacon biscuits on top of the old corner fence post and let the breeze do the rest. :)

I loved the smoked chicken and noodles. Loved the biscuits too!



I'll definately make this again soon. :)

Stopping by to read what you have been cooking up is always a treat, and this post did not disappoint.

That does it, I've talked about adopting you, but I've had it backwards - I'll soon be sending you the papers to adopt me - I can tend the garden, feed the animals, clean the shrimp, pack for camping trips, sous chef, and eat your cooking - and clean up.

Don't forget to save all the smoked uneaten skin and bones to make a wonderful, smoky chicken stock for soup.

The biscuits were pretty good. I used bacon drippings for the shortening and then brushed the tops with more. lol
They were full of flavor!

I can't wait until I have more time to experiment with alot of the things you're cooking up Jeanie. Those egg noodles look kinda interesting as does everything else. Why are you punishing the neighbors like that Jeanie? Maybe you're just trying to lure them over.

Haha Mark, I definately don't want to lure them over (even though I'd share:)). I think it's that wild streak in me from eating so much wild food. lol
The noodles are easy to make Mark, hope you give them a go sometime.

So, they were purely grain fed, therefore they don't get much caroteines, and the producers didn't call a supplier, colorfan in hand, to order some pigments/supplements.

Jeanie, overhere we are expected to pay a premium for corn fed chickens and their yellow skincolor.

Never cared for pasta, but the chucks look...

Probably too smokey for my taste (non-smoker), though;-).

P.s. I presume these are store bought chickens not your own old, slowly grown, egg producers after they stopped laying eggs?

Hi cowgirl again you've made my mouth water!Today we had some high winds and it broke a limb out of my peach tree. Mostley because it's loaded down with peaches. Any way I was wondering if I could use the wood to smoke something? If so should it be dry or green. I also have an apple tree that I trim every winter. again dry or green? Hi Donald!
I am not sure what the store bought chickens and eggs go through or what they are fed. The yolks are a pale yellow.
My hens roam the farm and eat bugs and grass seed..their egg yolks are a bright orange.
I raise duel purpose birds.. they are used for both meat and eggs. I have a variety of breeds and keep a few of the chicks back each spring for my food and use the rest of the chicks for replacement hens.
They spend the day roaming the farm and then head to the coop at night.
I thought you were a smoker too.
If you don't like noodles or smoked meat you definately wouldn't like this dish. :)

Your peach and apple wood will work great! I like to use dried wood. My preference is let it dry from 6 months to a year. (a year is my favorite)
One thing you need to think about is if the trees were sprayed with pesticides. I wouldn't use it if it were sprayed. (some people don't care but I do. lol )

I like slowly grilled chickens, Jeanie.

Good of you to catch and not waste the drippings, this time. That light brown goey clustering on top of the clear fat and fluid is so flavourful, especially when the chicken is properly salted and peppered.

Never had anything like those biscuits, so can't imagine how they would taste

As for wind damage, the heavy winds have kept me from transplanting my pepperplants to big pots and buckets and leaving them outside. Next few days we are going to get plenty of rain (hopefully), as this has been the dryest spring in recorded history. But that means i'll have to wait for the rain to stay away while so the plants can re-establish themselves, because I couldn't put them up in the windowsil if they are in large pots.

Hi cowgirl well I thought I had come up with something. Thanks for mentioning not using the wood if it was sprayed. Can't wate to see what your cooking next! I've been thinking about your horizontal smoker. I have a 500 gal. propane tank that would make one serious horizontal smoker. Put it on a trailer for mobility. OK I need to settle down before I get to excited. Tell me what you think. I know don't blow myself up! lol Have a blessed day your friend Mark

Hi Jeanie, yes, we are getting plenty of rain. It has been raining on-and-off all night. Following heavy winds during the cloudy day.

No nice and refreshing not sure how strong they were, I believe 5 Beaufort, so nothing like the dustbowl storms you has recently, but too much for plants from the windowsil;-).
