Talented BBQ friend Rueben from Guam posted his wonderful marinade recipe for beef, pork or chicken.. I loved it! :) Thanks again Rueben!
The Marinade recipe.
I poured the marinade over some boneless, skinless chicken thighs and let them chill overnight..
Threw a pouch of wood pellets onto the Hasty Bake and also a bowl of chicken stock and rice.
grilled my chicken thighs and a few spears of asparagus...
made more smokey fried rice... (I love that stuff)
The chicken was wonderful... Loved Rueben's marinade!

That marinade is called Adobo in the Philippines, and it is quite tasty, especially with grilled chicken.

Hey, that looks like a great all-purpose marinade. But, hold the presses, smoked rice!!! That would be addictive for sure. oh yum.

Actually Anonymous isn't correct. The marinade is not called adobo. Adobo isn't technically a marinade. Adobo encompasses a technique of cooking in vinegar and is actually a stew rather than a marinade. It wouldn't be considered adobo if it was grilled either.
The traditional taste of adobo, though varies, has a pronounced bay leaf flavor.
To be quite honest, I'm from Guam and have made this marinade plenty of times, this recipe is actually missing one or two ingredients. They are special ingredients that can only be found on Guam and on the Mainland where there are a lot of Chamorros living.
The recipe is good nonetheless.
