Hickory Smoked Beef Ribs n Beer

Pretty simple meal...
I slathered the beef ribs in bacon drippings, sprinkled with cracked black pepper and kosher salt, then onto the smoker with hickory until the pull back on the bone was just how I like it. :)





I forgot to mention... the outside air temperature was 9 degrees F. I set the Memphis Pro to 325F and it worked perfectly! I was very happy with the way it handled the cold weather. :)





I brushed one rack with some Boot Kickin' Q sauce...










I couldn't think of a side dish sooooo it was just beef ribs, beer and lots of napkins!

Side dish? Don't I see a sprig of cilantro on the plate? That looks like a good side dish for the beef ribs to me.

Looks like a good side dish to me. I have a rack of ribs that I cut off a rib roast and I'm looking forward to getting into them.

Drew...that's what I was thinking. I had a rib in one hand and a frosty mug in the other. There was no room for a silly side dish! lol

Thank you Nick!! I didn't pay close attention to the time but set the Memphis Pro at 325F. The outside air temperature was 9 degrees and I wanted to see how the Pro would handle the cold weather.
It worked perfectly!!
I removed the ribs when the pull-back on the bone was about 1 1/4 inches.

Jeanie, those look wonderful. It is hard for me get beef ribs here. Probably just as well, because when I do get them I usually hurt myself.

I think beer is that kind of side dish that fits to every meal. And smoked beer is the queen of side dishes. ;-)

There are no pikes in my area but I catch a lot of catfish and carp.. also some crappie and bass.
I love fishing...and camping!
The pike you catch are nice. Very large fish. They must be fun to bring in. :)

But i love the DRILLTHRILLLLLL too!

I think you have the right area for fishing and camping.

Bass and catfish are real fine fishes.

I try to go fishing how often i can! At the moment it is not possible, the lakes are still frozen and i have to get my licences..but i´m ready for TAKEOFF!! ;-)
No i´m not so good..but i try to get better with every day i´m out for fishing

Fun is the perfect reason.
There is no need for hurry...only the nature and the silence counts.
A catched fish is the "deposit"
Hope "deposit" is the right word.

i try to do this job as good as possible.....i hope i can catch on of this real big muskies sometimes

Yes Chris, that makes perfect sense! I enjoy the quiet and nature out there. If I catch a nice fish, it is a bonus.... or makes my trip extra nice! :)

I'm not sure how big muskies get in your area but the fish in your pictures are great!

I'm going to cook some catfish tonight for supper. I have some saved from camping this summer. :)


Talking with you about fishing has made me hungry for fish! haha..

I´m talking about that muskies in America.

pikes in my area a real large with 90cm or a little bit more.
Pikes with one meter ore more are hard to catch.

I saw picutures of your fishes!!! Looks real good

Wow Chris, the ones in your area are huge! I've never been pike fishing but would like to someday. I think they are found more in the states north of me. ( I'll have to check).
Some of the flathead catfish we catch in Oklahoma get pretty big. People ( not me) like to "noodle" for fish by catching them with their hands. I'm not brave enough to do that! hahaha..

In Italy there are real big catfish. 2meter and more. But catfish fishing is not so my business. I love pike and walleye.
I read reports about the alligator pike...muhhaaaahaa MONSTER ;-)

I like walleye too, there aren't many in my area though.

It would be fun to catch some of those big ones in Italy! :)

I´d like musky fishing anywhere it is possible...sweden is a fine country. I heard America is a fine area for musky fishing.
How ever....i´m waiting for better wether.

I think the northern part of America has the best musky fishing. Some of my friends enjoy ice fishing up there but I've not tried it.
I'm waiting for warm weather too! :)

Do you grill the musky you catch? I like your grilling BBQ blog!

The BBQ-Blog is a teamwork of two friends and me....but not compareable with your blog!!! Whole pigs, big smoker and outdoor grilling...i like your blog!!!!!
I grill the walleyes and pikes or fry it like "Wiener Schnitzel"
Anytime i will travel to America for fishing...but i don´t like flying ;-)

It's very simple.
first you have to tenderize the meat. Salt the meat,
coat it with flour, dip it in a egg milk mix and coat it with white bread crumbs.
Fry it in deep hot oil.
rice or fries are the perfect side dishes.
A mix of potato and cucumber salade is also well.
any way....you can serve any side dish you want.
I like rice and some salad.
Don´t forget the beer...it fits perfect ;-)

I´m so proud...it was my first english recipe lesson.
I hope everything is comprehensible.

You can use veal or pork.
Chicken breast is also a good choice...i love it!!!
btw. you can fill it with cheese and ham.
Than it calls Cordon Bleu...it tasts great.

I love pekin duck and kung pao chicken. :)

I'm about one hour away from town where I shop. I like it out here though. It's nice and quiet. :)

In a small village.
Not so much room...but better than in a town.
I would go insane in a town

I try to cook chinese food.
It is ok but it´s not that what I´m looking for!
I miss the last "kick"

I buy the egg roll wrappers at the store. They are a lot easier to use than making them fresh.
Some times I use wonton wrappers too.. I love wontons. I love potstickers too. :)

I wish I had some for breakfast! haha
