Made a loaf of meat...
rubbed some potatoes with olive oil, seasoned with cracked black pepper and kosher salt.
smoked with a bit of hickory...
sauted onions and garlic in butter until tender...
added my cubed smoked potatoes, milk and seasonings...then smooshed a bit.
I find it funny that if I'm too tired to peel the potatoes, I can leave the skins on and call them "Rustic Garlic Mashed Potatoes"... and everyone thinks it must be something special. :)
the meatloaf, smooshed potatoes and steamed beans..
It was sooooo tasty. :)

Mmmmmmm Somked meatloaf That is high on my favorites list, and hickory goes so well with beef. You really hit a homer this time Jeanie. I'm sure it was as delicious as it looks.

Can't get any more comfortable than that! That is one of those pull up a chair and stay for a while meals.
I'm so glad you use such precise language, Jeannie. Some folks just don't know the difference between smooshed, smashed, and mashed potatoes.

The best thing about meatloaf is the meatloaf sandwich the next day. One of my favorites.
That just looks REALLY good, Jeanie. Think that could be done in an offset, maybe finished in the oven?

Jeannie, I've seen where most people use loaf pans for smoked meatloaf and poke holes in the bottom to let the grease drain out. Is the grease not an issue when cooking it in a cast iron skillet? I saw where one guy said he liked using the cast iron skillet b/c he liked the grease to baste the bottom for a nice crust. I've never tried it in cast iron. What are your thoughts?

I like meatloaf in the skillet. It does stay moist on the bottom and I remove the loaf when it's still warm so most of the "drippings" stay in the skillet.
