With the long Memorial weekend coming to an end, it's time for most people to head home and back to work.
Sounds like a good time for me to go camping. I plan on being back next weekend. :)

Serenity often is the pleasure which camping brings. Be it in the mountains, the forest, deserts or plains. It's quite and peaceful. Oh let's hope so. Look forward to what memories and discoveries you return with that you might write about.
Vacation? Wow! I need one. Haven't had one since '99! But it looks like we will be able to this year. Yippee. I know you will read this when you get back so I will check to see if you have. Question. I haven't been able to purchase a pig for butchering in a couple of years, so when a smallish one (170#)became available this week I signed on. I was hoping to build the smoker this weekend and have it ready for the arrival of said pig next week. But it is too warm to smoke now (80'+ with high humidity--and mosquitoes), so my question is can I freeze the hams and belly to smoke in a few months when it cools down? Gosh! I'm really admitting to being a newbie! Thanks Cowgirl.

Hi Duane and Patricia! It sounds like it's been awhile since your last vacation... hope you get to take off for a few days now and again. It does wonders for your soul. :) lol
You can freeze the pork before smoking. It's not as tasty as fresh processed but it will work fine.
Freezing removes a lot of the moisture in the meat, it's best to double wrap or triple wrap if you can before freezing.
