I injected the pork butt with a mixture of beef broth, cholula hot sauce and onion powder...
schmeared the butt with Zaaschilla's Chipotle Cremosa sauce, then sprinkled with cracked black pepper...
into my drum with some hickory...
smoked at 225 degrees F until the butt reached an internal temperature of almost 200 degrees F... (a little over 8hrs) Then I let the butt rest for 30 minutes (covered).
After the 8 hr smoke, my drum was still going strong on the one basket of coal.... I closed the air intake and outlet holes to extinguish the hot coals. I'll use them on the next smoke.
I wanted to make a burrito for supper but decided to make two to compare.
The first one was topped with pintos, onions, black olives, minced jalapenos and cheese...
the second one was topped with onions and a spicy Q sauce...
I like them crispy.....
They both were tasty.... I couldn't pick a favorite...
So..... I didn't really accomplish much with my burrito experiment but it was a tasty supper. :)

Nice lookin' product there. Nothin' better than a day smokin' some meat and a cold one afterwards while enjoyin' the rewards. I'll have to give the chipotle a try one of these days. I'm doin' pretty good with a cajun mixture as my injection. Thanks!!

This puts a damper on tonight's spaghetti supper for sure. I grew up in SC and, for several reasons, consider myself to be quite the connoisseur when it comes to barbecue. I will get a smokehouse here on Rattlesnake Hill soon enough though!! You inspire me!!

They both look pretty tastey Jeanie. I can see why you would have a hard time to decide which one is the best. But it was a real good excuse to have two and not feel guilty about it I guess. I'm on to you Jeanie.

I beg to differ with ya. You did too accomplish something. You showed off your skills, filled your tummy and have all of us savoring over the pic's. You did great. I have 12 pounds of butt going now for the same type of meal. Waiting is the hardest part. Smoking on my new Ugly Cabinet Smoker (UCS). This is its initiation and its doing a great job.

Every time I am gone from the site for awhile and then come back--I want to smack myself! Man! I miss that part of the country! Freedom! To build a little smokehouse if I want without some landlords permission, or taxes jumping up 3 x's the cost of the little shack! Mostly, I miss good food. ya, having smoked pork on hand would be great but every time i have it people seem to come and gobble it up hahah. hope your spring is going good too, we finally didn't have a freeze during the sandhill bloom, hoping for a bumper season on them as well as the elderberries and my transplanted blackberries. we'll see i guess
