Beef Ribs, Marrow Bones ~n~ Cold Beer








I'd be happy eating beef ribs at least 4 times a week but sadly, that's not going to happen. Why do things that taste so good, have to be so bad for you? :)

This was one of those cooks when I was busy doing something else and just wanted the smoker going at the same time so I'd have something to eat when finished with my project.

I slathered the beef ribs with bacon drippin's, seasoned with some of the cold smoked garlic, onion, salt, pepper blend from my last smokehouse session.
Used the Hasty Bake for this cook. I still love this cooker!!



Drizzled some beef marrow bones with olive oil and used the same cold smoked salt, pepper, garlic, onion seasoning...




Made parsley salad for the marrow...
Just roughly chopped Italian flat leaf parsley, added minced capers ( my capers were huge, I cut them up a bit), lemon juice, olive oil, red onion...then salt and pepper to taste.




I let the salad chill while the marrow bones cooked.

The marrow bones don't take long at all, about 20 minutes. I watch for the marrow in the center to sink down a bit, but not completely melt. I also rotated the bones around the pan for even cooking.



Then toasted some bread. I had a garlic bread on hand, so that's what I used.



I love this stuff!! It looks questionable but tastes SO good. Almost like a beef butter. :)



Beef marrow topped with the parsley salad...the two are a match made in Heaven. :)




The garlic bread was nice for a change but honestly, you don't need anything fancy. A toasted slice of Rainbow white bread sittin' under the marrow and parsley salad is fine with me. The drippin's and olive oil from the bottom of the marrow pan sop up into the bread and make your eyeballs roll back into your head when you take a bite. :)



Back to the ribs...

Here's the project I was working on.
I built a play pen for some cornish game hens and a few baby ducks.



They're on a special diet so I'm letting them roam the farm while in "confinement". :)



Not quite a chicken tractor, I just call it the play pen.




The ribs were tender in about 5 1/2 hours...



They were so tender and juicy!


Not sure why I put two ribs on the plate, there's no way I can eat one in one sitting. lol They just looked so pretty. :)



I didn't have side dishes on my mind when I put these in the smoker so all I came up with was cold beer.



Not a fancy meal but it hit the spot after working on the "play pen".


Spring weather has been beautiful here. I'm getting a lot accomplished around the farm. The garden is doing pretty well (not producing yet)....and I just returned from camping at the lake. Will be posting more campfire meals soon.
