wrapped the burgers in bacon and smoked in my drum with some mesquite for about 45 minutes....
After smoking, I threw them on the grill to sear and finish cooking...
I like my bacon crispy. :)
I also like my buns toasted... I smoosh them down and grill the buns on both sides...
I loaded mine with cheese, spicy brown mustard, dill pickles, onions, fresh sliced tomatoes and lettuce.
Either I was really hungry .... or these were really tasty.... not sure which one but I loved it! :)

those look very good! toasted buns really make a difference, i like to melt the cheese to the burgers while they're finishing on the grill too.

I like em Chris.. also steaks. I should try pork chops. Maybe brine them first to keep them moist?

Mesquite in the drum? How much do you use?
I tried it a time or two and the smoke flavor was so strong on the burgers we couldn't eat them. And to make a burger that *I* won't eat is a real accomplishment. A poor accomplishment, but still... I would rather have a burger than a steak.

I use mesquite with a lot of beef and venison smokes.. I love it. :)
It doesn't take much at all though.. a little bit goes a long way.
I get the mesquite in Texas, bring back small logs, let them age for close to a year, then make chips.
I use larger chunks in my horizontal wood burner but the drum and smokehouse only need a few chips.
Hope you give it a try again.. start with just a few chips and see how it goes. Good luck to you!
Ok... I have decided to make a UDS... However, I can't find a drum anywhere! You are in NW OK... Any suggestions?

I would appreciate it... I can go anywhere around the metro to get one. I am an OU student and will be heading back to the glory land soon. However, I have searched high and low around here (Enid area) and haven't found anything. The metro area has some but they want a lot more than I want to pay. I wouldn't mind paying $50 or so if it is a good quality, open top, food grade drum. It's crazy how I can see drums everywhere until I look for one. Anyway... Any help would be amazing. Thanks.

These were suggested by a couple of helpful smoking friends that live in the area. I'm not sure what the drums would cost..you might give those places a call though.
