New Years Day Hoppin' John, Collards and Jalapeno Corn Bread

For the first day of the new year I made a batch of hoppin' john with black eyed peas for luck, some collard greens for wealth and some jalapeno corn bread just cause I love it. :)


I cubed up some smoked canadian bacon to simmer in my hoppin' john pot.....




Sprinkled the top with crisp fried bacon and green onions....

It was warm, filling and tasty and I feel lucky already!! I think this stuff is gonna work! :)

That hoppin john looks great! I miss having black eyed peas for New Years, but since I moved up to Western PA - it's all sauerkraut and pork! This quasi-southern girl needs to get back to her roots :)

Thanks Tim! I had a splash of cider vinegar over the greens. lol The hoppin' john was nice and spicy though. :)
