I finally got the chance to cook up a few of the catfish I caught this summer...
Made a batch of hushpuppies too. :)
I add minced onions, jalapenos and corn to the hushpuppy batter....
Seasoned the catfish with a cornmeal mix....
fried til golden....
I used my old home made burner. It's made out of a piece of pipe, expanded metal, the burner from a hot water heater, and rebar for legs....
I ended up using a flashlight while cooking the last couple of batches... I need to put a light up on my patio!
After cooking I cranked up the gas and enjoyed the warmth....
The catfish and jalapeno hushpuppies were pretty tasty!

I suppose there may be a better meal than that, but I can't think of one right now. Everything looks perfectly cooked.
Looks great I love catfish. You don't get much up here in Michigan. Good stuff anyways. I can't remember the last time I had a good hushpuppie. It's a territorial thing I guess. I managed to smoke some chicken wings and then deepfry them the other day. Turned out great. Of course I blogged them.
Thank you Big Dude! I crave catfish every so often. It's just hard to beat. :)
Bushman, your smoked fried wings sound great. I'll check them out!
Thanks!
She makes her own outdoor burners too? Sigh, shaking head and feeling so lazy for buying anything anymore;)
J you define self-sufficient. I really am impressed!
:) Chris you are so kind. Thank you!
I know for a fact that you aren't lazy...your blog says it all. :)
