Still using up some of that Zaaschilla chipotle cremosa smoked pork butt. lol
I blistered my chilies....
Let them steam in a baggie for easy peeling....
Mixed some smoked chipotle pork, onions and campesino.....
Rinsed, seeded and stuffed the chilies with the pork mixture....
Dusted with a bit of flour to make the batter stick....
The batter I used for this many rellanos was 3 beaten egg whites mixed with 3 TBS of flour and three beaten yolks added...
Dip and fry......
With the suggestions of a few smoking friends, I gathered up some mexican beer to try....
The chipotle smoked pork chili rellanos....
I was able to eat one and drink one frosty mug of beer....
Looks like I will be set with leftovers for a few days. :)

What beer did you prefer? Pacifico is what we prefer when we are fishing down on the Baja. I stumbled onto your blog several months ago when I was looking for a recipe. You did have some serious plans for you pork butt. Rellanos look great. I have some anaheims out in the garage from the garden that I need to do the same with.

I tried the Tecate last night with one rellanos and by the time I ate and drank that one, I was too full to try more. lol
The beer is on ice right now so I'll try another one later today.

Yum! I plan to make some chili rellenos in the next couple of weeks too! I figure I'll stuff them with beef roast of some sort since that is what I have around here- in great abundance. It pays to be a rancher!
Maybe I'll freeze the rest of the meat and make tamales later!
