Using grilled corn adds another level of flavor to the cakes.
I know I've posted this recipe in the past, but here it is again. lol
For the corncakes, I use...
1 cup of flour
1/4 cup of cornmeal
1 1/2 tsp baking powder
1/4 tsp of salt
1 tsp of sugar
1 egg
About 1 cup of milk or more if needed for a thinner batter
1 cup of corn
Chopped green onion
I fry the cakes in a small bit of oil...
Made a few pancakes too...
I like mine with maple syrup.....

I guess you could really put anything in the batter...maybe even minced jalapenos. That would wake you up! lol

I'm not really sure why I like the corncakes so much...I think it was because my Mom made them a lot. It must be one of my comfort foods. lol
Those look fantastic! I have three camping trips coming up in the next month - I can't wait to cook over the fire. I'm curious - do you mix up your batter prior to going? Or do you take your measured ingredients with you?
My neighbor lady "grandma Janie" use to make corn cakes for me all the time. Between her kitchen and my moms I learned to whip up some good meals.

I take the ingredients with me and mix up what I need while there. It helps if I put all of my dry goods in a plastic tote and keep my eggs, milk and other food in an ice chest.
I break my eggs open into a quart canning jar at home... and can usually get 2 dozen eggs into one jar. The jars fit down into my ice chest and I do not have to worry about eggs breaking. You just "pour" out how many eggs you need at one time.

I grew up on them too. Our were made thinner. I like them with homemade Blackberry jam on them! Brings back great memories!
