Sometimes I like to cook small pigs on my block pit. I just remove the third layer (top layer) of blocks and lay the pig on the grate. I do not cover the pig at all, just slow roast and baste with a mixture of cider vinegar, onions, jalapenos, crushed red pepper flakes, kosher salt and black pepper...
The skin comes out nice and crispy and the meat is moist and tender....
