Calf Fries (mountain oysters)

I Made up a batch of calf fries and catfish Sunday.
I won't go into detail about how the fries were cleaned, but they were home grown. lol
The catfish was caught this summer.







First the cleaned and peeled fries are sliced about 1/4 inch thick. It's best to slice them while partially frozen, they are easier to work with.

The larger fries get tenderized.



Then they are rolled in cracker crumbs.



Fried until golden and crisp.



Drained on paper towels. Lightly salted.



Served with coctail sauce....tartar sauce for the catfish.

They make a great snack served with an icy cold beer. :)

Good one Cowgirl, I have eaten my weight in calf fries, but I have never seen or heard of anyone tenderizing one. That is just the way I used to serve a lot of them, at a fish fry. The grease was already hot.

I have fond memories of Rocky Mountain Oysters (thats what we call them in Colorado) that we ate as kids. We lived right behind a VFW and my dad would bring them home for us from there. I didn't know quite what they were, but I sure enjoyed them.

I have eaten a few VFW calf fries myself. They were outstanding. Those folks sure know how to cook :)

Now, I've lived in many foreign countries and have eaten many things that, if known what they were, would be unpalatable, monkey brains (from a live monkey), bird nest soup (bird vomit from a cliff swallow), bats, rodents of assorted variety, insects of many kinds, but, no thank you, I will not insert, knowingly, a testicle into my mouth. Must be a chick thing. ;)

I talked to a Texan one day that said he had never tried them and never would. I had to laugh....I had never met a Texan that didn't like calf fries.
He was from Austin.

Jeanie, Did I read that guys post correctly?! He can eat raw brains from a live monkey, bird vomit, and bats...But he's squemish about breaded and fried testicles?!! I've never tried them, but they look very tasty. And I'd darn sure try these before I'd ever think of eating raw brains, or any of the other items he mentioned for that matter. I'll bet his momma doesn't even kiss HIM on the mouth! lol
