Pulled Pork n Tater Waffles
One of those last minute decision suppers. I planned on making potato pancakes with a bit of leftover smooshed potatoes... but got kind of carried away.
The leftover potatoes...
Added about one TBS of baking powder, a little flour and a beaten egg. The potatoes were already seasoned with salt so I didn't add more.
Then came some chopped Hatch Chiles, pulled smoked pork and a few scallions...
Gave the waffle iron a spray of oil then scooped about 1/2 cup of the tater, pulled pork mixture in each spot. I didn't have a full 2 cups so the lower right one got shorted.
I checked the waffles and tasted the small one....
decided to leave the others in longer to "crisp" a bit more...

Topped with a fried egg...
I'll be making these again. The waffles had great flavor, were crisp on the outside and tender in the center. They were a lot quicker to make than the potato pancakes I had originally planned on making. (no flipping).
Another good use for leftover pulled pork too!
The weather has been great here! Actually getting a bit of rain, the grass is turning green and right now my rose bush is blooming. I try to pick fresh flowers every day and bring them inside....the house smells so sweet. :)

That looks like a damned fine way to use leftover mash. I often mix it with onions and bacon and fry it on a griddle. I like this idea much better.
Regarding the Hatch chiles, are they canned? Don't know if I can get them here.

Joe, Thanks! I like the sound of your bacon idea. Will give that a try.
The hatch chiles were some that blistered, peeled and froze last fall.
I think they come canned though.
Any green chiles would work I bet.
