Not sure what to call this... it's just chili. :)
I have been in the mood for "winter" food. Chili sounded good and I can't eat chili without a fresh hot tortilla, so...
I gathered the ingredients, cubed beef, onions, jalapenos, chilis, New Mexico Hatch chili powder, tequila, a Shiner Bock beer, beef stock, smoked salt, garlic, oregano, tomatoes... hmmm I think that was all.
browned some bacon fat in the CI pot...
removed bacon, seasoned the beef with smoked salt and black pepper, then browned in bacon drippings..
removed the beef and cooked the onions and garlic til tender...
put everybody into the pot, the seasonings...
the beef, tomatoes, jalapenos...
beef stock and beer...
Two shots of tequila...one for the pot and one for the cook! :)
then simmered for several hours until meat was fall apart tender...
made my flour tortillas..
I mix 2 cups of flour
1 teaspoon salt
1 teaspoon baking powder
Mix well then add
1 Tablespoon of lard (or shortening)
Mix well then add
1/2 cup to 3/4 cup of warm water
Mix and form into ball, let it rest for 10 to 15 minutes.
cook in hot skillet for a minute or two on each side...
then store them in a plastic baggie to keep them pliable..

with hot flour tortilla slathered in butter...
It was pretty tasty...just what I was craving. :)

My grandmother used to make tortillas three times a day, every day. She has one daughter who carries on the tradition, but the rest of the family has surrendered to convenience and uses store bought. There's nothing better than a fresh tort, hot off the grill, dabbed with butter and sprinkled with salt.

Hi David! I only get 5 or 6 tortillas from this batch. I make them kind of big. :)
That chili looks really nice, I'll have to give that a try. Never had a home made tortilla before. I'll have to include that in the process. I'm just curious about one thing. What happened to the drill press? :)
lol Chris! I was eye-balling it the other day. Getting the shop straightened out for deer season.
I should get it out and use it. lol
