I lay awake in bed the other night thinking about the cold smoked back bacon I had in my freezer from the last butchered pig.
I like to make bacon wrapped bacon but wanted to make something special for breakfast this time.
I used some cold smoked back bacon...
Sliced it thin.....
Topped with eggs that were scrambled in butter with scallions and minced garlic....
Rolled "eggroll" style then dipped in an egg milk bath and rolled in panko bread crumbs...
Fried until golden and crispy....
I sliced a few in half and made hollandaise sauce for dipping.....
They were soooo tasty. :) Crisp on the outside, the bacon and eggs were tender and moist....
I curled up on the couch with my favorite pillow and enjoyed my breakfast. Not sure if I will make this often but it was nice to relax and spoil myself after morning chores. :)

That looks good. Speaking of a cold smoker. I found this guy that built a cold smoker it was really cool. He explained why he did things. One thing he did was put rocks in the bottom of his smoker and made the smoke come up through the rocks. I will find the web site and send you a message. You still have email.

Looks delicious. Unfortunately, my blood pressure and celiac disease won't let me enjoy such salty, deep fried goodies very often. I'm mostly a gluten-free oatmeal man in the mornings. But I can lust after this dish just a bit. :) Love your site!

Very interesting breakfast snack that is Jeanie. That really does look tastey.
Jeanie The weather is warm and sunny here. I was multi-tasking with the tiller, the weed eater, the mower, the BGE, the drum AND adult beverages so NO pics..:(
Two loooooong days but the chicken thighs on Fri and the leg quarters on Sat. turned out fine and were really good! We have lots shredded for the future, and I've got a hunka pork for the drum tomorrow or Tues. Maybe I'll get that posted..
