Walleye n Tater Cakes

A talented smoking friend named Phesant (who happens to be an excellent angler too) sent a nice batch of walleye filets he had caught in the cool waters of his home state, Wisconsin!
Also included in the package was a home made pepper blend!
Woohoo!!
What a nice surprise! :)
















I've not tasted walleye in years so I was anxious to cook a few filets..

not wanting to over power the fish with heavy seasonings, I brushed with butter and sprinkled with a small amount of lemon pepper.... then placed into the Pro with a bit of mild apple wood.




While the filets smoked I made a few potato patties..

I beat one egg...



added two baked potatoes (peeled). Mashed potatoes work fine, I just had the baked ones on hand. Also added minced onion, crumbled crisp bacon, salt, pepper and garlic powder...





rolled golf ball sized pieces, flattened them a bit, dipped in an egg/milk wash and coated with panko bread crumbs...




ready to fry...



I fried in butter until golden and crisp...



Smoked the walleye until it easily flaked...




I made a butter, onion, lemon, sherry, caper sauce to top the filets...

The sour cream topped potato cakes, steamed asparagus and lemon caper topped walleye...



the potato cakes were nice and crispy on the outside and tender in the center...



the walleye was heavenly. :) I think this was the best meal I've had in years!




I've not had the chance to try the pepper blend but am looking forward to it!

Walleye is the tuna of the great lakes region. I recently acquired 6 more fillets from a friend at work. I'm glad you got to have some after such a drought. It looks wonderful. I can't resist just a simple pan fry on mine. I roll in a dry mix and fry. Nothing more. It won't be long and I will be thawing it out. I have 10 days off for the holiday season so maybe then.

Mmmmm! There's something heavenly about very simply done mild fish. The butter, capers, and lemon sound like a very good idea! (Darn - now I'm hungry for fish and it's only 9am!! Good thing for me, I'm going to a fish dinner fundraiser tonight. They'll be having yummy fish with a marsala wine sauce!)

Jeanie - That is some of the best looking walleye I've ever seen. Living here in the land of walleye (MN) I typically see them breaded and fried - this looks like a great departure and something I'm going to have to try once we start cutting holes inthe lake and dropping a line!

Bushman I think walleye has to be one of my favorites! Almost makes me want to move north. lol
I like the sound of your pan fried recipe.. hope you take some pics if you get the time.

Thank you David! You definately have it made up there.. to be able to catch fresh walleye on a regular basis would be wonderful!
I've not tried ice fishing.... it sounds like fun. :)

I like the smoking the fish inside the glass dish. I will try that Sunday. I was surprise you steamed the asparagus, versus a quick grill. I love to grill the asparagus with simple salt, pepper and touch of lemon.

Wow, that does look delicious - a real comfort food meal. How do you make that sauce w/ the capers?

That was truly a tasty looking fish feast Jeanie. So I've never had catfish, but Walleye is fairly plentyful around here. Alot of the time we call them pickerel I like it, but you make it look even better.

This sounds delicious! It's so gratifying to make something you've grown/picked/caught yourself too I think. Makes it that much better to me.

Anonymous, I DO love grilled asparagus but didn't have the time to tend to it that day. The steamed had to get me by.

Thank you Mrs JP! It was pretty tasty.. I love walleye. :)
The sauce is the same one I use on chicken.. It's posted under "Campfire Chicken Piccata" in the recipe section.
I use butter, about 2 TBs lemon juice, 2TBs of capers and 2TBs of sherry... it's easy to make and adds so much to plain chicken.

Thanks Mark! I've heard of pickerel but didn't know it was walleye.. I've learned something new! :)
Maybe when you get your place finished and get out on a canoe you can catch a few for dinner. I bet they would taste great just roasted on a stick over a fire! :)

I'm gonna try that sauce, the next time we make fish (not fried). I just don't like the fishy taste. I wish I did; maybe this sauce will help.
