Venison Summer Sausage ( I shouldn't even post this)

I shouldn't post this because I lost my "after" picture of the sausage sliced and sittin' on a saltine. :)







I used my favorite venison summer sausage recipe..


For each 3 lbs of venison burger ( I mix my venison with pork fat) add...
1 cup water
1 tsp. mustard seed
1/2 tsp. garlic powder
1/4 tsp. onion powder
1 1/2 tsp. onion flakes
2 TBs. Tender Quick
If you do not use a smoker.... add 2TBs of liquid smoke ( don't tell my smoking friends I said that lol)




Either let this chill overnight or stuff into casings ....then chill overnight..








sm0ked with some hickory..
I brought it to an internal temperature of 160F.
If using an oven, bake at 300F degrees for 1 1/2 hrs.










It was late by the time I finished, but the sausage turned out great. You'll have to take my word for it. lol

Next time I'll be careful with my pics!

Thanks Mo! I really like this recipe. The sausage just disappears too fast... kind of like jerky. lol

Sausage too. As you know I am a big fan of venison products in the smoker. I did summer sausage, snack sticks and jerky this past weekend. I am anxious to try your recipe. Perhaps this weekend. What ratio do you mix your pork and venison? I use 70/30. Have you tried adding some high temp cheddar cheese to the mix. It is really good. Still no buck for me and time is running out. Congrats on the deer!!!!

Thanks Bushman! I like my venison burger 70/30 too. Seems to work well for me. I have used the high temp cheese in the past but do not use it very often. It's not readily available here so I just serve a hunk of cheese on the side. :)

Nice looking Deer ya got there! See you had a bit of snow too! lmao! Its -30c here today.. I think the word for it is "crisp" I like the upgraded casings instead of the foil or plastic wrap. Looking pro!

Nice Buck Jeanie The sausage recipe sound great. If I fill my tag this year I'll give it a try, Been getting whooped so far. The only ones I have seen where mixed in with my heifers.

Thanks Marc! This year I had tags for two deer... a buck and a doe. I think there might be another doe season coming up soon too.
I only hunt during rifle season, I'd like to try bow hunting someday though.

lol Bud, I think this batch lasted 2 maybe 3 days. :)
Hope you're not freezing! Heard the weather is pretty cold down your way.

It all looks pretty good Jeanie, even with the missing pictures. I like summer sausage, but I'm not sure if I had it made from venison before.

Thanks Mark! There's not a huge difference in taste (to me) between beef summer sausage and venison.. maybe I just eat enough of it I'm used to the flavor.

I'm doing fine. just haven't been on the interweb much. Thanksgiving was great. Got tagged to do appetizers. Last year hit em with the Photon Torpedoes so I thought I'd try something new. Bought a bunch of boneless chicken breasts and cubed them. Mixed a little lemon juice and honey and dipped them in it. Put on some of my spicy rub and smoked them with apple wood. When they were about done I mixed some sugar and lemon juice with a splash of bourbon and misted them lightly. They turned out pretty darned good. :)

Hey Nick, Thanks! Good to see ya.. Sounds like you got at least one deer too..congratulations! :)
If you can't get plain old pork fat use a really inexpensive bacon. They are fatty... just don't use the maple flavored kind. Any other cheap smoked bacon works great.
