This has to be the easiest campfire breakfast... even easier than campfire biscuits and gravy. :)
I brown some sausage and start frying a skillet of cubed potatoes, onions and garlic...
then I sit in my little rocker under a shade tree with a nice cup of camp coffee.....
when the potatoes have fried, I skooch them over and add a few eggs.....
I like to scramble the eggs separate to make sure they cook all the way through... (I'm not fond of runny eggs lol )
then mix the fried potato and onions with the scrambled eggs...
heat tortillas and everyone builds their own burrito....
I added cheese and salsa to mine....
It was quick and tasty!

I went camping this week and spent lots of time with the dutch oven, potatoes, sausage, gravy and biscuits. Your trick with the pie pan biscuits rocked! Seriously girl, you are my Oprah!
How big are your irons?? And what kind of oil do you use to cook the taters and onions and garlic??

I have a variety of CI, the one with potatoes is a 12 and the one with sausage is actually a lid for a CI pot. It's about 1 inch deep and I used it as a small skillet.
I used some veggie oil for the tatoes but brought some peanut oil for frying the fish.
I use the same CI in my house kitchen.. I love the stuff. :)
all those fishing poles, and you're frying sausage? wassup up with that? (g)

Salt Fork River? Salt Plains? Looks familiar... It has been a while since I've been up that way though...
It's Salt Plains Kyle.. close to Jet. It's a pretty area..and no one goes there because they can't ski. :)
I do a lot of fishing on the Salt Fork northwest of Nash on Trenton Road... Don't make it all the way to the lake too often though... There are some fantastic spots around that area...
I bet you catch some big ones on the river Kyle! I've talked to a few people who noodle some nice flatheads around that area.
Now I have fishing fever again. lol
