Smoked Crab Spread

I forgot to post these pictures...

After surf and turf on the campfire, I made some smoked crab spread with the leftover crab legs. There were only a couple of legs left but it was enough to make a nice snack the next day.



I mixed some cream cheese with garlic, onion, a small amount of milk and lemon juice, then folded in the lump crab meat.









It was a tasty snack! :)

Surf n Turf on the Campfire

Here's another one of those meals I cooked while camping. :)

I started out by filling split potatoes with bacon, onion, butter and seasonings...




While the potatoes roasted over the fire, I sauteed some green onions, garlic and sliced mushrooms in butter....









Then I started my garlic butter.....



Threw on some ribeyes and asparagus drizzled with olive oil and sprinkled with kosher salt and cracked black pepper...




Lastly added my crab legs to the fire.....


The crab legs are already cooked so I just heat them up a bit and let them soak up a some of that smokey flavor....



The bacon and onion stuffed potatoes, grilled ribeye with sauteed mushrooms, smokey crab legs, fire roasted asparagus and garlic butter....





I cut down a styrofoam cup to hold my garlic butter. :)


It was pretty tasty!


Where did the week go?

I've heard that time flies when you're having fun. I must have had a blast this week. :)

Farmyard Supper

I don't often give it a second thought, but this weekend while staring down at my supper.... I realized how much I rely on the things I raise, hunt or forage for myself.

Grilled pork loin and a sausage link from behind my barn, tomatoes, cucs, onions and panfried okra from by garden....









I'm not planning on growing mustard seeds for my spicy brown mustard, but I bet I could have made another spicy dipping sauce from the peppers and other items in my garden. lol

Breakfast Burritos over the fire

I know... another campfire cook. Good thing I only camped out for a week. Can you imagine a month's worth of campfire cooking pics? :)


I started my sausage links with a bit of butter. Fried some cubed potatoes with onions...











When the potatoes and onions have browned, I scoot them over and scramble my eggs....







Then I toss them together and add seasonings.....


Heated a few tortillas over the fire....







I added cheese to mine, and some of my homemade salsa...







Sometimes I brown sausage in with the eggs and potatoes but this time I just cooked some links on the side.
It's an easy campfire breakfast. :)

Campfire Chicken Piccata and Garlic Smashed Tatoes

More campfire cooking........ lol


I made this chicken dish last summer while camping and my friends requested it again for this camp out.

I started my cubed potatoes in salted water....



Sauteed some green and yellow onions with minced garlic in a bit of butter......








Grilled some chicken and bacon wrapped corn......


Added half of my sauteed onions and garlic to my drained, tender potatoes....



Made my sauce...

added capers, lemon juice, butter and sherry to the sauteed onions and garlic....




Smashed the potatoes with a bit of milk, butter, salt and pepper....




Placed my grilled chicken into the skillet of sauce....



The chicken piccata, garlic smashed potatoes, cucumber salad and watermelon...







The pictures aren't the best, but I never know if they are going to come out at all when camping. lol

The food tasted good so I guess that's what counts. :)
