Beef Cheek Tacos on the Comal




Been awhile since I got the comal out for a taco cook. It's so handy to use, I cook in the center and keep the food warm around the side til time to eat.

I use my fancy cooker, set a ring in the center to hold the comal steady.



I started with some onions.... I add a bit of oil to the top of the comal, the fry the onions..





Scooted the onions to the side and fried some peppers....


next came scallions and jalapenos...


then the beef cheek meat...


I  prepare the beef cheek meat in advance and keep in bagged and in the freezer for quick get togethers. I simmer the cheek meat with beef stock, onions, garlic, seasoned salt, onion powder, til tender. Then shred. 


Next came two batches of shrimp...
I just coated the shrimp in olive oil and seasoned well with coarse salt and cracked black pepper...









Lastly, the tortillas. I like small corn tortillas for this.






Add fixin's and supper is ready!


I had to go for one of each. Shrimp taco and a beef cheek taco...








Served with cold beer and plenty of napkins!

It was a beautiful evening...
We finished eating just as the storms rolled in.

A Bacon Cheeseburger Pizza.... Blackstone Griddle Style





I've made a few pizzas on the Blackstone griddle and am happy with the way they turn out. They might not be considered to be "real" pizza, but they'll do!

This was pretty quick and easy... I made the pizza just how I like my bacon cheese burgers.
I browned some burger and onions on the griddle...



Scooched them over and added a pre-made pizza crust. I let it go til brown and crisp.



When the crust bottom reached the color I liked, I flipped it over and turned the griddle burners off.




I brushed the pizza crust with a spicy brown mustard...



Then added the browned burger and caramelized onions...


Next some shredded American cheese...


I slid the hard cover lid over the griddle to capture the heat and melt the cheese... Sometimes I just use an inverted pan to cover the pizza.


Sprinkled on some crisp bacon...



Next came more onions and a few dill pickles..


and a bit more cheese..






I topped the pizza with shredded lettuce, tomatoes and a few more dill pickles and called er good!



Well, the wind whipped up and that slice of pizza slid off the plate and landed by the hitchin' post/ boot scraper. It was devoured in minutes. lol


I went for a second slice and decided to eat it inside the house! 

This pretty much tasted like a bacon cheeseburger. I liked everything about the flavors, the spicy mustard, cheese, bacon and dill pickles were what I normally use on a burger. I'll be making this again in the future!
