Dutch Oven Fatty Benedict




I was able to get away for a few days of camping and fishing. Made some of my favorite meals while there....breakfast fatty benedict being among them!

I made my favorite filling first. Fried potatoes, onions, garlic, ham and cheese...
Used my stainless fatty piston (thanks again Rolf!), and stuffed the sausage roll.







Wrapped in a bacon weave and chilled overnight in the cooler. Saves a lot of time in the morning!


I used one of my dutch ovens but didn't bring a rack for the bottom. I found this little smoker box that CharBroil sent to me a few years ago. Wedged the rack into the dutch oven, it worked pretty well.


When using the dutch oven for fatties, I like to keep the fatty up above the drippins while cooking..


Burned a few logs down to make some hot coals...





Shoveled a few hot coals on top and let er go...





I sat back and watched the fishin' poles while breakfast cooked.


This one took about 1 hour.. I like crisp bacon.






I let the fatty rest while making hollandaise sauce...
Three egg yolks, a squeeze of lemon juice, then butter whisked in til the sauce is as thick as you like..




Takes a lot of whisking!


Cooked eggs in butter, added heat to set the tops...


Toasted my english muffins and breakfast was ready!







Topped an english muffin half with sliced fatty, egg, then drizzled with the hollandaise. I added fruit and had an empty place on my plate that just didn't look right. So I added a slice of fatty to fill the spot. lol  Of course I couldn't eat it all, but I tried!








One of my favorite camp breakfasts! Not sure why I don't make this at home. I need to!
It was nice to get away for a few days. The weather wasn't the best.. lots of wind.. but I put rocks in my pockets and didn't blow away!
Caught a few catfish and brought some home for the freezer. I'm hoping to fry some up today.

We're finally getting a bit of rain here! Still in a drought situation but things are definitely looking better. My garden is doing well. Lots of blooms on the tomatoes and I've got baby summer squash peeking through the leaves.
