Some Southern Comfort





Talking with a friend awhile back about how much we loved the meat on a turkey neck lit the fire underneath me to cook some.

To save on time I simmered the necks overnight. Also added a few pork neck pieces to the pot.



cooked onions, peppers and garlic...



then started a roux...



added stock from the simmering meat, the de-boned meat and a few seasonings to the pot...



Into the BPS drum to simmer...



made a batch of jalapeno cornbread...



added the skillet of cornbread to the drum too..



gave the meat a stir every so often as the "pot liquor" thickened...



The cornbread cooks fine in the drum but doesn't get as brown on top as in an oven. You can run it under a broiler but I skipped it this time..


 fried bacon for the greens...used a mix of turnip, collard and mustard greens.



added stock...








Already had purple hull peas and rice ready so supper was good to go.
The turkey and pork neck meat was nice and tender.. Served it with the gravy over rice.





It was a pretty simple meal but tasted SO good at the time. Both the pork neck and the turkey neck meat is rich and tender. Takes a bit more work to prep (remove from the bones) but it's well worth it.
A lot of times these meats are overlooked, but they are packed with flavor.

 I'm trying to catch up on posts and checking out friend's blogs while I have the chance.

That looks great. Love your cooker too. That would be great at deer camp.

Jeanie, I will have to try this. I always throw the neck into a pot to make stock on Thanksgiving. My wife always thought I was crazy when she caught me sucking the meat off the bones. Now she knows... ;)

I always forget about the turkey neck, and it is so tasty. Makes me want to go out and buy one. I made your cornbread recipe over the weekend and my family loved it!

You have no idea how far down the taste scale this drops the frozen pizza I have in the oven right now. That looks awesome! When I get back from my lake next weekend, I heading to the local butcher and seeing if I can find pork necks. You rock C-girl!

Thank you Bushman, I took the burner camping a couple of times. Really came in handy during a burn ban when I couldn't have a camp fire.
Got this one a Bass Pro in Okla City. It was under $100. at the time.
I've used it several times at home and really like it.

Bill I'm glad to hear I'm not the only one who likes the neck meat. :)
During Thanksgiving I simmer it with the other giblets to make gravy.
Tell your Mrs. I'm crazy too. lol

I think the necks are fairly cheap in the store. Mixed with gravy, it makes a tasty, filling meal.

lol Chris, thanks!! Funny you should mention frozen pizza, I just purchased a toaster oven (not sure how to use one yet) but had pizza on my mind when I bought it. lol
Is there a tasty brand of frozen pizza?

first of all that is not a simple meal. it looks so very good. second there is likely no frozen pizza that could be called even tasty compared to any food i've seen you post. lastly, the ambition it takes to make food like this is as much appreciated from your blog as the food you show how to make. i typically fail the ambition part in lieu of frozen pizza :)
