IMO the simple things are the best things in life. . It doesn't take much for me to be happy. :)
One of my favorite meals has to be catfish and hushpuppies. That's all I need, no other sides, no plates or forks. Just catfish and hushpuppy fingerfood.
I cut up the catfish into bite sized nuggets, mix cornmeal, flour, salt and cayenne for coating.
Used my fancy Bass Pro fish batterer. It really is handy if you have a large amount of fish to coat. Usually I just use a baggie.
made some hushpuppy batter...
set up the cooker ...heated the oil...
fried the hushpuppies til golden...
That was it. A simple supper...
I enjoyed the meal, makes me glad that I have an addiction to fishing. :)

I love fried catfish, too. Now we just need to find a place to fish that I don't feel like I'm taking my life in my hands (or feet!) when I fish there. ;-)

you absolutely kill me...you are out enjoying nature and can make perfectly fried breaded food. I am at home and I can make a perfectly fried breaded mess.

One of my favorite things to do as well. chicken wings and a bag of french fries with my fryer set up next to the campfire. Bones go in the firepit!

Ahhhh that looks SO good! I usually fry stuff in plain flour- haven't tried cornmeal before. Going on a camping trip this weekend, wondering if I can't heat up oil over a fire??

These hushpuppies are a southern U.S. dish....made of cornmeal, flour, salt, baking powder, eggs, milk.... I put minced onions, jalapenos and corn in them too.
They are almost like a cornbread (if you are familiar with that.)
I drop spoonfulls of the batter into hot oil and fry until puffy and golden. I have a recipe for them here on my blog, here's a link...

I hope you try them sometime Jon, they are usually served with fried fish. Catfish is my favorite.

I've seen one of those breading thingys. It doesn't clump up? Is it dishwasher safe? I usually just use a plastic bag but must admit I am curious! I knew as soon as I saw the title and the first picture that it was a fish fry! woohoo.
It works great Mrs JP, no clumping and it is dishwasher safe. It seems to use less breading too. I guess I make more of a mess of it when I do it myself. lol
